Jalapeño, Cilantro Chicken & Rice

This one pot wonder meal of Jalapeño, Cilantro Chicken & Rice is the perfect dish when pressed for time
- 2 cups cooked rice
- 2 cups (8 ounces) Monterey Jack cheese, shredded
- 1 1/2 cups cooked, chopped chicken breast meat
- 1 can (12 fluid ounces) Nestlé Carnation Evaporated Milk
- 1/2 cup red onion, finely chopped
- 2 large eggs, lightly beaten
- 1/4 cup cilantro, finely chopped
- 2 tablespoons butter or margarine, melted
- 1 tablespoon jalapeños, diced
- Salt
Custard Pie

Put all ingredients in blender
- 3 eggs
- 1/2 tbsp flour
- 3/4 cup sugar
- 1/2 stick melted butter
- 1 1/4 cup milk
- 1 tsp vanilla
Magic Pumpkin Pie

Mix everything and pour into pie shell
- 1 unbaked pie shell
- 2 cups canned pumpkin
- 15 oz sweetened condensed milk
- 1 egg
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 3/4 tsp cinnamon
Becky's Chili & Tacos

This was my mamas recipe, its with homemade plate size tacos
- 1 chopped onion
- 1 lb ground beef
- salt & pepper
- 6 tsp hot chili powder
- 2 tbsp flour
- 1 can tomato sauce
- 3 tbsp Worcestershire sauce
- 1 can kidney beans
- Tacos: 1 cup flour, 1 cup corn meal, 1 tsp salt, water
Caramel Icing

- 2 cups brown sugar
- 1/2 cup evaporated milk

Grilled Asparagus with Black Bean Salsa

Preheat the grill or a grill pan to medium-high
- 2 bunches asparagus, trimmed
- 4 vine-ripe tomatoes, seeded and diced
- 1 medium red onion, diced
- 2 tablespoons cilantro, chopped fine
- 1 can black beans, drained
- 1 teaspoon garlic paste
- 2 lemons, juiced; zest of 1
- 1/2 jalapeño, seeded and diced fine
- 1/4 cup extra-virgin olive oil
- 1 teaspoon kosher or sea salt
Brunswick Stew

Put flour, salt & pepper in bag, shake chicken until coated
- 1 Fryer cut up
- 1 stick oleo
- 1/2 cup oil
- flour
- salt & pepper
- 1 lg onion, sliced
- 4 cups water
- 1 lg can tomatoes
- 1 cup diced ham
- 1 can green lima beans
- 1 can whole kernel corn
- flour & water paste
Buffalo Bread

Just mix the mayo, sour cream, butter, scallions, and garlic in a medium bowl
- 1 Loaf French bread
- 1/2 Cup mayonnaise
- 1 stick unsalted butter
- 2 Tablespoons sour cream
- 8 ounces low-fat mozzarella, shredded
- 4 ounces blue cheese
- 1/2 Cup hot sauce (Frank’s is the best)
- 1 Cup scallions, chopped
- 4 cloves garlic
- Fresh ground pepper
Cabbage Salad

Sauté noodles, seeds & almonds in butter
- 1 head cabbage shredded
- 1/2 red 1/2 green
- 1 bunch green onions sliced
- 1/4 cup sliced almonds
- 3/4 cup sesame seeds
- 2 pks ramen noodles, throw away season pks
- 1/3 cup butter
- Dressing
- 1/2 cup oil
- 1/4 cup red wine vinegar
- 2 tbsp soy sauce
- 1/4 cup sugar
- Black pepper to taste
- Mix just before serving
Kathy's Pecan Muffins

mix 1st 3 ingredients in large bowl, make a well in the center of mixture
- 1/2 cup chopped pecans
- 1 cup firmly packed brown sugar
- 1/2 cup all purpose flour
- 2 lg eggs
- 1/2 cup melted butter
