Weight Watchers Baked Potato Soup

Preheat oven to 400ºF. Place potatoes in oven
- 3 lbs. potato(es), rinsed, pierced with a fork (about 6 large baking potatoes)
- 6 slice uncooked turkey bacon
- 4 cup reduced-sodium chicken broth
- 1 1/2 tablespoons thyme, fresh, chopped
- 1/2 teaspoon table salt
- 1/4 teaspoon black pepper, freshly ground
- 6 tablespoons reduced-fat sour cream
- 6 tablespoons low-fat shredded cheddar cheese
- 6 tablespoons scallion(s), sliced optional
Beef, Blue Cheese and Spinach Quesadilla

Stir beef and taco sauce together in a bowl
- 1/3 cup cooked lean ground beef
- 3 tablespoons taco sauce
- 4 large burrito-size wheat flour tortillas
- 4 oz blue cheese, crumbled
- 10 oz chopped frozen spinach, thawed & squeezed dry
- 1/2 teaspoon red pepper flakes
Pumpkin Bread

- 3 cups sugar
- 4 eggs
- 1 cup oil
- 2 cups pumpkin
- 3 1/2 cups flour
- 1 tsp cinnamon
- 1 1/2 tsp salt
- 1 tsp nutmeg
- 1/2 tsp allspice or pumpkin pie spice
- 2 tsp baking soda
- 2/3 cups water
- 1 cup chopped nuts
Squash Pickles

Combine squash & onions, sprinkle with salt & let stand 1 hour
- 8 cups sliced squash
- 2 cups sliced onions
- 1 tbsp pickling salt
- 1 cup diced green pepper

- 2 1/4 tsp lemon zest
- 4 1/2 Tbsp fresh lemon juice
- 1 1/2 tsp minced garlic
- 1 tsp table salt, or to taste
- 3/4 tsp black pepper, freshly ground
- 1 pound(s) uncooked boneless, skinless chicken breast, four 4-oz pieces
- 2 spray(s) cooking spray
- 4 cup(s) romaine lettuce, thickly shredded
- 1 cup(s) canned chickpeas, rinsed and drained
- 1/2 cup(s) roasted red peppers, packed in water, diced
- 1 cup(s) English cucumber, sliced
- 10 medium olive(s), Kalamata, sliced
- 1/4 cup(s) crumbled feta cheese

- 2 medium onions, chopped
- 1 medium carrot, chopped
- 1 medium stalk celery,sliced
- 3-4 pounds uncooked boneless, skinless chicken breast, cut into strips
- 14 1/2 oz canned crushed tomatoes
- 1 tbsp basil, fresh, chopped (or 1 tsp dried)
- 1/2 tsp sale
- 14 tsp black pepper
