Mix all casserole ingredients together & put in 9 x 13 pan
- 3 cups sweet potatoes cooked & mashed
- 1 cup sugar
- 1/2 cup butter
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 cup milk
- Topping
- 1 cup lite brown sugar
- 1/2 cup flour
- 1/3 cup butter
- 1 cup chopped pecans

- 2 cups rotini -- uncooked
- 10 ounces frozen mixed vegetables
- 9 ounces skinless boneless chicken breast -- cooked
- 15 ounces alfredo sauce
- 1/4 cup grated parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
Creamy Peach Berry Dessert

1. In a medium bowl, combine yogurt and cream cheese
- 2 cartons (6 oz) Yoplait® Light or Original Harvest Peach® yogurt
- 1 package (8 oz) fat-free cream cheese, softened
- 1/2 of a container (8 oz) frozen light whipped dessert topping, thawed
- 1 cup chopped pitted and peeled fresh peaches or thawed and drained Cascadian Farm® frozen peach slices
- 1 cup fresh or Cascadian Farm® frozen unsweetened blueberries, raspberries, and/or strawberries, thawed and drained if frozen
- Fresh mint leaves (optional)
- Fresh berries (optional)

- 8 thigh skinless chicken thigh(s), about 2 1/2 oz each
- 2 cup(s) canned chicken broth, reduced-sodium
- 1/2 pound(s) cremini mushrooms, sliced
- 1 cup(s) leek(s), white and pale green parts only, thinly sliced, washed carefully for grit
- 1 cup(s) carrot(s), thinly sliced
- 1 cup(s) celery, thinly sliced
- 3/4 cup(s) uncooked brown rice, medium-grain (such as brown Arborio)
- 2 tsp Worcestershire sauce
- 1 tsp Dijon Mustard
- 1 tsp dried sage
- 1 tsp table salt
- 1/2 tsp black pepper, freshly ground

- 2 gal green tomatoes, quartered
- 2 qts onions, sliced
- hot peppers
- 2 qts vinegar
- 6 cups sugar

- 5 cups water
- 1/2 tsp salt
- 1 stick butter
- 1 1/2 cups uncooked grits
- 2 tbsp finely chopped garlic
- 1 cup shredded smoked gouda cheese
- 2 jalapeno peppers, seeded and finely chopped
- enough oil to fill pan 2 inches
- Lulu's crazy frying flour
- 2 cups milk

Instructions Preheat oven to 350ºF
- Ingredients
- 1 spray(s) olive oil cooking spray
- 2 pound(s) uncooked boneless, skinless chicken breast
- 30 oz canned black beans, rinsed and drained
- 3 cup(s) fat-free sour cream
- 2 cup(s) shredded reduced-fat Mexican-style cheese, divided
- 8 oz chopped green chilies, two 4-oz cans
- 2 tsp ground cumin
- 1/2 tsp black pepper
- 12 medium corn tortilla(s), cut into 2-inch strips
- 1 cup(s) salsa, mild, medium or hot
Weight Watcher Buttermilk Chive Mashed Potatoes

1. Cover the potatoes (in a bowl) with plastic wrap; vent
- 3 1/2 c steam and mash frozen cut russet potatoes
- 1/4 c nonfat buttermilk
- 1/4 c tub style light cream cheese
- 2 T yogurt based spread (Brummel & Brown)
- 1 T chopped chives
- 1/4 t salt
- 1/4 t pepper

Preheat oven to 450, beat eggs slightly
- 2 cups crumbled cornbread
- 2 1/2 cups toast torn up
- 3 1/2-4 cups chicken stock
- 1/2 cup melted butter
- 1 cup chopped celery
- 1/3 cup diced onion
- 4 eggs
- 1/8 tsp salt
- 1 tsp sage
Drago’s Style Charbroiled Oysters

Note: The more sauce that oozes onto the plate the better for mopping up with the bread
- The Sauce:
- 1 Stick Unsalted Butter, very soft
- 1 Pinch Kosher Salt
- 1 tsp Freshly Ground Black Pepper
- 1 Tbsp Minced Garlic
- 4 Tbsp Pecorino Romano
- 1 pinch Cayenne
- 1 pinch White Pepper
- 1 Spritz Lemon Juice
- 1 tsp Minced Italian Parsley
- Whisk together all ingredients.
- For the Oysters:
