Italian Sausage Soup

Directions In a stockpot or Dutch oven, brown sausage with garlic
- 1 pound Italian sausage
- 1 clove garlic, minced
- 2 (14 ounce) cans beef broth
- 1 (14.5 ounce) can Italian-style stewed tomatoes
- 1 cup sliced carrots
- 1 (14.5 ounce) can great Northern beans, undrained
- 2 small zucchini, cubed
- 2 cups spinach - packed, rinsed and torn
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt

Paleo Best-Ever Chocolate Quinoa Cake {gluten-free}

- 2 cups cooked quinoa*
- 1/3 cup unsweetened almond milk (or preferred milk)
- 4 whole eggs
- 1 teaspoon vanilla extract
- 1/2 cup Earth Balance, melted (or butter)
- 1/4 cup melted coconut oil
- 1 cup organic evaporated cane juice/ or organic white sugar/ or coconut sugar
- 1 cup unsweetened cocoa powder (I used Hershey’s Special Dark)
- 1/2 teaspoon baking soda
- 1 and 1/2 teaspoon baking powder

- 2 lbs. deveined shrimp (shells on or off, doesn't matter - I prefer shells on)
- 1/4 cup ghee
- 1/4 cup ketchup
- 1/4 cup maple syrup
- 1 bay leaf, crumbled
- Juice of 1/2 a lemon (about 2 tbsp lemon juice)
- 2 tbsp worcestershire sauce
- 3 cloves garlic, minced/grated
- 1 tbsp chopped fresh parsley
- 1-1/2 tsp paprika
- 1 tsp hot sauce of choice (opt)
- 1 tsp crushed red pepper flakes
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper (feel free to omit if you're not crazy about spicy food)
- 1/2 tsp black pepper
- 1/2 tsp sea salt

- 2 chicken breasts
- 3 teaspoons olive oil, divided
- salt & freshly ground pepper to taste
- 1 1/2 cups green onions, finely chopped, divided

- 1/8 teaspoon cumin

Now that nuts are part of my everyday diet, I wondered if I would be less excited about my spiced nuts this year
- Ingredients:
- 2 1/2 cup nuts – almonds, pecans, cashews, and macadamias taste best
- 2 tablespoons coconut oil, melted
- 1 1/2 teaspoons ground cumin
- 1/4 teaspoon cayenne pepper
- 2 tablespoons coconut sugar (or white sugar… but it’s not 100% paleo that way)
