Chocolate Pecan Bars

These chewy, chocolaty bars are great for Thanksgiving or Christmas
- FILLING:
- 2/3 cup butter, softened
- 1/3 cup sugar
- 2 cups all-purpose flour
- 6 ounces semisweet chocolate, chopped
- 1-1/4 cups light corn syrup
- 1-1/4 cups sugar
- 4 eggs, lightly beaten
- 1-1/4 teaspoons vanilla extract
- 2-1/4 cups chopped pecans
- GLAZE:
- 4 ounces semisweet chocolate, chopped
- 1-1/4 teaspoons shortening
Cranberry Christmas Tree Bread

- 1 1/2 cups fresh or frozen cranberries
- 3/4 cup sugar
- 1 tablespoon fresh orange juice
- 1 1/2 teaspoons grated orange rind
- 1/2 (16-ounce) package frozen bread dough, thawed
- 2 tablespoons butter, melted
- 1/3 cup chopped walnuts (optional)
- 1/4 cup cream cheese-flavored ready-made frosting
Vanilla Yogurt Ice Cream

Place all the ingredients in a medium-sized bowl and mix thoroughly
- 1 egg
- 6 Tbs. sugar
- 1/4 C. light corn syrup
- 3/4 C. heavy cream
- 3/4 C. Non-Fat Plain Voskos Greek yogurt
- 1 1/2 tsp. vanilla extract
- 1/4 tsp. salt
Greek Salad

- 3 Tablespoons Olive Oil
- 1 1/2 Tablespoons Lemon Juice
- 3 teaspoons garlic, minced
- 1/4 teaspoons salt
- 1/4 teaspoons ground pepper
- 3 tomatoes, cut into wedges
- 1/4 medium red onion, sliced
- 1/2 cucumber sliced, in to thick half moons
- 4 oz. feta cheese, cut into small cubes
- 16 kalamata olives (optional, I sometimes leave the out)
Chicken Tamales Recipe

- DOUGH:
- 20 dried corn husks
- 1 broiler/fryer chicken (3 to 4 pounds), cut up
- 3 quarts water
- 1 medium onion, quartered
- 2 teaspoons salt
- 1 garlic clove, crushed
- 1 cup shortening
- 3 cups masa harina
- CHICKEN CHILI FILLING:
- 6 tablespoons canola oil
- 6 tablespoons all-purpose flour
- 3/4 cup chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
- 2 cans (2-1/4 ounces each) sliced ripe olives, drained
Coffee Punch

- 1 T vanilla
- 1 gallon vanilla (or chocolate) ice cream, softened

Spicy Oriental Marinade

- 1 T five spice powder
- 1 T cayenne pepper
- 1/2 c green onion, fine chop
- 1/2 c low sodium soy sauce
- 1/2 c red wine vinegar
Honey-Beer Braised RibS

Directions Combine the brown sugar, pepper and salt; rub over ribs
- 1/2 cup packed brown sugar
- 1 teaspoon pepper
- 3/4 teaspoon salt
- 6 pounds pork baby back ribs
- 1/4 cup honey
- 1 bottle (12 ounces) dark beer or beef broth
- 1/4 cup cider vinegar
- 1 bottle (18 ounces) barbecue sauce
Pumpkin Flan

Directions In a small heavy skillet over medium-low heat, combine 1/3 cup sugar and water
- 1 cup sugar, divided
- 1/4 cup water
- 1-1/2 cups fat-free evaporated milk
- 3 eggs
- 1 egg white
- 1/4 teaspoon salt
- 1/4 teaspoon each ground cinnamon, cloves and ginger
- 1 cup canned pumpkin
- 1 teaspoon vanilla extract
- Additional ground cinnamon, optional
Eggnog Sauce
