The Chew
- 1 cup unsalted butter (softened)
- 1 cup dark brown sugar
- 1 cup light brown sugar
- 2 cups fine sugar
- 6 large eggs
- 1/2 tablespoon vanilla extract
- 1/2 tablespoon light corn syrup
- 2 1/2 cups high quality chunky peanut butter
- 4 teaspoons baking soda
- 4 1/2 cups quick-cooking rolled oats
- 4 1/2 cups old-fashioned oats
- 1 1/2 cups semisweet chocolate chips
- 1 1/2 cups regular candy-coated chocolate candies
- 1 1/2 cups candy coated peanut-filled chocolate candies
Mashed Potatoes cooked in milk

I saw this on one of the cooking shows, tried it and really can tell the difference in my potatoes - - - enjoy!
- 3 1/2 pounds white, red, or Yukon Gold potatoes peeled and quartered
- salt
- milk or heavy cream (which ever you have handy)
- 4 ounces (1 stick) unsalted butter, softened
- 1/2 cup whole milk or heavy cream, warmed (this I eyeball)
Chocolate-Chunk Oatmeal with Pecans and Dried Cherries

Place an oven rack in the middle of the oven and preheat to 350 degrees
- 1 1/4 cups (6 1/4 ounces) all-purpose flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups (3 3/4 ounces) old-fashioned oats
- 1 cup toasted pecans, chopped
- 1 cup (4 ounces) dried tart cherries
- 3/4 cup bittersweet chocolate chips or 4 oz. of chopped bittersweet chocolate
- 12 tablespoons unsalted butter (1 1/2 sticks), slightly softened
- 1 1/2 cups (10 1/2 ounces) packed brown sugar
- 1 large egg
- 1 teaspoon vanilla
Chicken: Gaida's Roman-Style

Season the chicken with 1/2 teaspoon salt and 1/2 teaspoon pepper
- 4 skinless chicken breast halves, with ribs
- 2 skinless chicken thighs, with bones
- 1/2 teaspoon salt, plus 1 teaspoon
- 1/2 teaspoon freshly ground black pepper, plus 1 teaspoon
- 1/4 cup olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 ounces prosciutto, chopped
- 2 cloves garlic, chopped
- 1 (15-ounce) can diced tomatoes
- 1/2 cup white wine
- 1 tablespoon fresh thyme leaves
- 1 teaspoon fresh oregano leaves
- 1/2 cup chicken stock
- 2 tablespoons capers
- 1/4 cup chopped fresh flat-leaf parsley leaves
Chicken: Balsamic Rosemary

1. To make marinade: In a small pot, add vinegar, oil, rosemary, garlic, salt and pepper and mix until combined
- 1/2 cup balsamic vinegar
- 2 teaspoons olive oil
- 1 1/2 tablespoons fresh rosemary, chopped
- 1 tablespoon garlic, minced
- 1/2 teaspoon salt
- Fresh black pepper, to taste
- Cooking spray
- 4 (5 ounces each) boneless, skinless chicken breasts (If your chicken breast are large, cut into 5 ounce sizes to equal 4 breasts)
- 2 tablespoon balsamic vinegar
- Fresh rosemary springs, for garnish
Meat Loaf, Glazed

1. MAKE GLAZE Whisk all ingredients in saucepan until sugar dissolves
- Glaze:
- 1 cup ketchup
- 1/4 cup packed brown sugar
- 2 1/2 tablespoons cider vinegar
- 1/2 teaspoon hot sauce
- Meatloaf:
- 2 teaspoons vegetable oil
- 1 onion, chopped fine
- 2 garlic cloves, minced
- 2/3 cup Saltine crackers, crushed (about 17 crackers)
- 1/3 cup whole milk
- 1 pound 90-percent lean ground beef
- 1 pound ground pork
- 2 large eggs plus 1 large yolk
- 2 teaspoons Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon dried thyme
- 1/3 cup finely chopped fresh parsley
- Salt and pepper
Pasta:Cavatelli with Garlic Broccoli Sauce

Cook broccoli and drain (reserve 1 cup water)
- 1 lb. cavatelli, cooked al dente (can use shells or rigatoni)
- 4 cloves garlic
- 4 tbsp. olive oil
- 1/2 can chicken broth
- 1 bunch broccoli florets
- 1/4 c. Parmesan cheese
- Salt to taste
- 1/2 tsp. garlic powder
- Dash red pepper
Peruvian Lomo Saltado

Prepare the bag of French fries according to package directions
- 1 1 ounce) package 1 (16 ounce) package frozen French fries
- vegetable oil as needed
- 1 1 1/8 to 1/4 tri tip, sliced 1/8 to 1/4 inch thick
- to and pepper to taste
- 1 1 1 large onion, sliced into strips
- 3 3 3 large tomatoes, peeled, seeded, and sliced into strips
- 1 1 1 yellow chili pepper (preferably Peruvian aji amarillo)
- 1/4 1/4 1/4 cup distilled white vinegar
- 1 1 to dash soy sauce to taste
- 2 2 2 tablespoons chopped fresh parsley

Preheat oven to 350*
- CRUST:
- 1 3/4 cups all-purpose flour
- 1 cup butter ,chilled and cut into cubes.
- 1/4 cup ground walnuts or pecans
- A pre made crust of any kind can be used. Keebler Shortbread, Graham Cracker etc.
- 2 (8 ounce) packages cream cheese, softened
- 1-2 Tbsp. lemon juice (to taste)
- 1 cup sugar
- 2 (3.4 ounce) packages instant lemon pudding mix
- 3 1/2 cups milk
- 1 (12 ounce) container frozen whipped topping, thawed
HONEY GARLIC BAKED CAULIFLOWER

1. Preheat oven to 400F. Set whisked eggs aside in a small bowl
- for the sauce:
- 1 small head of cauliflower, cut into bite sized florets
- 2 cups panko bread crumbs (Kikkoman brand preferred for even baking)
- 2 large eggs, whisked
- 6 tbsp honey
- 4 garlic cloves, minced
- 1 tsp onion powder
- 6 tbsp water + 2 tsp cornstarch
- 1 1/2 tbsp low sodium soy sauce
- 1/2 tbsp sriracha sauce
