- 3 Cloves of Garlic – minced
- 1/4 Cup Extra Virgin Olive Oil
- 1 1/2 tsp Lemon Juice
- 1/2 tsp Lemon Zest
- 1/2 small Yellow Onion – thinly sliced
- 1/4 Cup Fresh Oregano – roughly chopped, plus more for garnishing
- 1/2 tsp Salt
- 1/4 tsp Pepper
- Vegetable Oil – to brush grates
- Zoodles:
- 2 Zucchini – spiralized (about 1 pound total)
- 3/4 tsp Kosher Salt
- 1 TBS Lemon Juice (about 1 small lemon)
