MAMA T'S CHICKEN CACCIATORE

Season chicken with salt and pepper
- 1 whole chicken (separated into 8 pieces, about 3 - 3 1/2 pounds)
- 3 tablespoons olive oil
- 1 large onion (sliced)
- 3 garlic cloves (minced)
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 3/4 cup red wine
- 1- 1 1/2 cups crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon red pepper flakes
- salt and pepper (to taste)
- crusty bread (to serve)

- 3 lbs potatoes
- 1 cup chicken broth
- 2 tablespoons fresh lemon juice
- 1/4 cup butter, melted (no substitutes)
- 1 teaspoon oregano (or to taste)
- 1 tablespoon fresh minced garlic (optional or to taste)
- salt and pepper
- 1/2-3/4 cup grated parmesan cheese (or to taste)
- chopped fresh parsley
Chicken or Veal Piccata

Squeeze the juice out of one of the lemons and set the juice aside
- 4 boneless, skinless chicken breast filets, about 4 oz. each
- 1 medium sweet onion finely chopped
- 2 cloves garlic, peeled and crushed
- 4 Tbl olive oil
- 3/4 cup all-purpose flour
- 5 Tbl butter
- 2 lemons
- 2 Tbsp capers
- 1/2 cup dry white wine
- 1 cup chicken stock or broth
- 2 Tbsp Italian parsley, finely chopped
- Kosher salt to taste

Adjust oven rack to middle position and heat oven to 425 degrees
- Sugar Topping
- 1/3 cup (21/3 ounces) sugar
- 1 1/2 teaspoons finely grated zest from 1 lemon
- Streusel Topping
- 3 T white sugar
- 3 T brown sugar
- 1/3 cup flour
- 5 T melted butter
- Muffin
- 2 cups (or less if you are me!) fresh blueberries, picked over
- 1 1/8 cups plus 1 teaspoon sugar
- 1 tablespoon water
- 2 1/2 cups unbleached all-purpose flour
- 1/2 teaspoons baking powder
- 1 teaspoon table salt
- 2 large eggs
- 4 tablespoons (1/2 stick) unsalted butter, melted and cooled slightly
- 1/4 cup vegetable oil
- 1 1 cup buttermilk
- 2 teaspoons vanilla extract
- If topping with lemon sugar, stir together sugar and lemon zest in small bowl until combined; set aside.
- If topping the muffins with streusel, combine ingredients until it is the size of peas and set aside.

1. Toss the zucchini with 1/2 tsp
- 2 medium zucchini, coarsely shredded
- Kosher Salt
- 1 tbsp. unsalted butter
- 1/2 small onion, finely chopped

- 2 ears corn, kernels cut off
- 1/4 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1/4 tsp. baking soda

- 3/4 cup buttermilk
- 1 large egg

PREPARATION Warm 2 cups milk in a small pot over lowest heat
- 2 cups whole milk
- 1/4 cup extra virgin olive oil (EVOO)
- 1/4 pound pancetta, finely diced
- 4 ounces trimmed chicken livers, finely diced (optional, but recommended)
- 2 small onions, finely chopped
- 2 small ribs celery, finely chopped, with leafy tops, chopped
- 1 large carrot, peeled and finely chopped
- 6 cloves garlic, chopped
- 2 small sprigs fresh rosemary, leaves picked and finely chopped
- 2 fresh bay leaves
- 2 1/2 pounds ground beef (chuck or sirloin) and veal mix
- Kosher salt and freshly ground black pepper
- Freshly grated nutmeg
- 2 pinches ground cloves
- 1 1/2 cups dry white wine (about 1/3 bottle)
- 2 cups beef stock
- 2 cups chicken stock or vegetable stock
- 2 cans Italian pureed tomatoes (28 ounces)
- 1 pound egg tagliatelle or bucatini pasta
- 3 tablespoons butter
- Grated Parmigiano Reggiano cheese
Chicken Piccata with Noodles & Zoodles

Rinse and dry the zucchini and trim both ends
- 1 large zucchini
- ½ lb (250 g) whole-wheat linguine
- Salt and freshly ground pepper
- 2 tablespoons extra-virgin olive oil, plus more for drizzling
- 1 lb (500 g) boneless, skinless chicken breasts
- ½ cup (2½ oz/75 g) all-purpose flour
- 1 tablespoon unsalted butter
- Juice of 1 lemon
- 2 tablespoons capers, drained
- ¼ cup (1 oz/30 g) grated Parmesan cheese
- ¼ cup (1/3 oz/10 g) chopped fresh parsley leaves

In a large bowl mix all batter ingredients together until smooth
- 1 1/2 lbs boneless skinless chicken breasts (cut into 1” chunks)
- Oil (for deep frying)
- Batter-
- 4 tablespoons cornstarch
- 1/4 cup flour
- 1 teaspoon baking powder
- 1/2 cup water
- 1/2 teaspoon salt
- 1 egg
- 1 egg white
- Sauce-
- 1 1/2 tablespoons oil
- 2 teaspoon ginger (minced)
- 3 tablespoons garlic (minced)
- 1 teaspoon salt
- 3 tablespoons honey
- 1 teaspoon rice wine vinegar
- 1/2 cup water
- 1 teaspoon cornstarch (mixed with 1 teaspoon water)
- Sesame seeds (for garnish)
Sauce: Gwen's Homemade Chili Sauce

Mix all ingredients except for the vinegar in a large stockpot and cook for 2 hours over low heat, stirring often
- 16 cups chopped ripe tomatoes (about 16 medium)
- 6 large sweet onions, chopped fine
- 2 green bell peppers, seeded and chopped fine
- 2 red bell peppers, seeded and chopped fine
- 1 cup brown sugar
- 1 teaspoon prepared horseradish (or to taste)
- 1 tablespoon celery salt
- 2 teaspoons cinnamon
- 1 teaspoon dry mustard
- 1 teaspoon nutmeg
- 2 cups apple cider vinegar
