General Tso's Chicken

1. In a large bowl, combine 1 cup rice wine, ¼ cup of soy sauce, and cubed chicken thighs
- For the general tso’s sauce:
- 2 quarts vegetable oil for frying
- 1 cup rice wine
- 1/4 cup soy sauce
- 1 pound boneless, skinless chicken thighs (cubed)
- 1 cup flour
- 1 tablespoon salt
- 1 tablespoon vegetable oil
- 2 cloves fresh garlic, minced
- 1 teaspoon fresh grated ginger
- 1/2 cup dried chili pods
- 1/4 cup rice wine
- 1/4 cup soy sauce
- 1/4 cup rice wine vinegar (may substitute white wine vinegar)
- 1/4 cup sugar
- 1 tablespoon cornstarch slurry (equal parts cornstarch and water, mixed)
- For the garnish:
- 1/4 cup green onions, chopped
- White rice

- 2 eggs, well beaten
- 1 1/2 cups of milk or yogurt (I used milk and am only assuming that the yogurt will work as well)
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 3 medium apples, peeled and coarsely grated (I used yellow delicious, but will use a more tart variety next time)
- Extra flavorings (see recipe notes)
- Vegetable oil, for frying
- Confectioner’s sugar, for dusting

Rachael's Creamy Three-Meat Ragu with Pappardelle & Burrata

- 1 tablespoon olive oil
- 2 tablespoons butter
- 1/2 pound ground beef
- 1/2 pound ground veal
- 1/2 pound sweet Italian sausage, casings removed
- Salt and finely ground black pepper
- 1 scant teaspoon white pepper
- 1 carrot, peeled and grated or finely chopped
- 1 large shallot, finely chopped
- 2 tablespoons fresh sage, very thinly sliced
- 2 large garlic cloves, chopped
- Finely grated nutmeg, grate it while making one pass over the pan
- 1 tablespoon tomato paste
- 1 cup white wine
- 2 cups passata, or tomato puree

- 1 pound pappardelle, or 500 grams
- 1 cup freshly grated Parmigiano-Reggiano, plus more for topping

1. Preheat the oven to 200°C/400°F
- 12 hash browns (defrosted)
- 3 sausages (cooked to your taste, chopped)
- 3 bacon (cooked to your taste, chopped)
- 5 eggs
- 1/4 cup milk
- 1/2 cups grated cheddar
- 5 grams finely chopped parsley
- Pepper, to taste

1. Finely grate the zest from 4 of the lemons, then pulse in a mini food processor with 3 tablespoons salt
- 6 lemons
- Kosher salt
- 1 stalk lemongrass -- finely chopped
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons Sriracha (Asian chile sauce)
- 2 cloves garlic -- minced
- 1 tablespoon fish sauce
- 2 teaspoons packed light brown sugar
- 30 extra-large shrimp -- unpeeled

- 1/4 cup hoisin sauce
- 2 Tbs. pure maple syrup
- 1 Tbs. soy sauce
- 1 Tbs. honey
- 2 tsp. Asian sesame oil
- 2 tsp. minced fresh ginger
- 1/4 cup peanut or canola oil

- Small wheel of brie
- Frozen puff pastry (Pepperidge Farm)
- Jam (Fig, Hot Pepper, Strawberry - personal pref_
- 1 egg (mostly the yolk and a bit of water or milk)
- Non-stick foil

- 1 cup creamy peanut butter
- 1 cup sugar
- 1 tablespoon butter, softened
- 1 teaspoon vanilla
