Low/No carb - one-pot dish
- 1 1/2 to 2 lbs lean ground beef or sirloin
- 1 Tbsp. Extra Virgin Olive Oil
- 1 large onion - chopped
- 1 clove Garlic- minced
- 1 small cabbage - chopped
- 2 cans (14.5 oz. each) low sodium diced tomatoes
- 1 can (8 oz) tomato sauce
- 1/2 cup water
- 1 tsp. sea salt
- 1 tsp. ground black pepper
Baked Eggnog French Toast

Spray a 9 x 13 baking pan with Pam
- STREUSEL TOPPING:
- 1 loaf french bread
- 6 large eggs
- 2 1/2 cups eggnog
- 3/4 granulated sugar
- 2 Tbsp. vanilla extract
- 1/2 tsp. ground nutmeg
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1 tsp. cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. salt
- 1/2 cup cold butter - cut into pieces
- Maple syrup
Creamy Egg Strata

Place bread cubes in a well-buttered 13x9 baking dish
- 1/2 (16 oz) French bread loaf, cubed (5 cups)
- 6 Tbsp. butter - divided
- 2 cups (8 oz) shredded Swiss cheese
- 1/2 cup freshly grated Parmesan cheese
- 1/3 cup chopped onion
- 1 tsp. minced garlic
- 3 Tbsp. All-purpose flour
- 1 1/2 cups chicken broth
- 3/4 cup dry white wine
- 1/2 tsp. salt
- 1/2 tsp. freshly ground pepper
- 1/4 tsp. ground nutmeg
- 1/2 cup sour cream
- 8 large eggs - lightly beaten
- Garnish: chopped fresh chives

- 1 3/4 cups Granulated sugar
- 3/4 cup 6 oz block style fat free cream cheese softened
- 1/2 cup Butter or stick margarine softened
- 1 tsp. Vanilla
- 2 large Eggs
- 1 1/2 cups All-purpose flour
- 1 1/2 tsp. Baking Powder
- 1/4 tsp. Salt
- 2 tsp. Ground Cinnamon
- 3 cups Rome apples (2 large) chopped & peeled

- 1 tsp Seasoned Pepper
- 1/2 tsp Dry Mustard
- 1/4 tsp Cayenne pepper

- 1/4 cup Green onions finely chopped

Fresh Blackberry Pie

Gently toss berries and 1/4 cup sugar in a large bow; cover and chill 8 hours
- 1 1/2 cups blackberries
- 1 1/4 cups sugar - divided
- 1/2 pkg Refrigerated pie crust
- 3 tbsp corn starch
- 1 1/2 cups water
- 1/2 tsp vanilla extract
- 1 3 oz pkg Raspberry gelatin
- 4 drops Blue liquid food coloring Cool Whip or Reddi Whip
Fruit Cocktail Cake

Preheat oven to 350. Grease a 9x13 cake pan
- SAUCE:
- 2 eggs
- 1 can 15 oz Fruit cocktail - undrained
- 1 1/2 cups Granulated sugar
- 2 cups All-purpose flour
- 2 tsp. Baking Soda
- 1/2 tsp. Salt
- 1/2 cup Light brown sugar - packed
- 1/2 cup Chopped pecans
- 1 Stick Butter
- 1/2 cup Granulated sugar
- 1 5 oz Evaporated milk
- 1 cup Flaked coconut
- 1/2 cup Chopped pecans
- 1 tsp. Vanilla extract
