- Salt and Pepper
- Parmesan Cheese
Chicken Breasts - Sesame Garlic

1. Preheat oven to 350. Coat a 9 x 9 inch baking dish with cooking spray
- 4 (4 ounces each) chicken breast, boneless, skinless
- 1 head cabbage
- 1/4 cup reduced-sodium soy sauce
- 2 tablespoons fresh orange juice
- 2 tablespoons hoisin sauce, see shopping tips
- 1 tablespoon brown sugar
- 2-3 packets Truvia, Stevia or Splenda (sugar substitute), to taste
- 1 tablespoon ginger, from a jar, see shopping tips
- 1 teaspoon minced garlic
- 1 tablespoon cornstarch or flour
Broccoli Salad

Mix all salad ingredients together in a large bowl
- Dressing:
- 4 cups Broccoli florets small
- 2 cups Raisins
- 1 cup Cashew nuts chopped
- 1/4 cup Chopped red onion
- 1/4 cup Real bacon bits
- 1 cup Mayonnaise
- 2 Tbsp. Vinegar
- 1/3 cup Sugar
Asparagus Saute

- 2 lb. fresh asparagus
- 1/4 cup butter or margarine
- 1 large red bell pepper - diced
- 1/2 tsp. salt
- 1/2 tsp pepper
Pennsylvania Dutch Pickled Beets & Eggs

- 8 eggs (already hard boiled)
- 2 (15 oz) cans whole pickled beets - juice reserved
- 1 onion chopped
- 1 cup white sugar
- 3/4 cup cider vinegar
- 1/2 tsp. salt
- 1 pinch black pepper
- 2 bay leaves
- 12 whole cloves
- Splash of hot sauce
Pasta Fagioli - Crockpot

- 2 lbs ground beef
- 1 onion, chopped
- 3 carrots, chopped
- 4 stalks celery, chopped
- 2 (28 ounce) cans diced tomatoes, undrained
- 1 (16 ounce) can red kidney beans, drained
- 1 (16 ounce) can white kidney beans, drained
- 3 (10 ounce) cans beef stock
- 3 teaspoons oregano
- 2 teaspoons pepper
- 5 teaspoons parsley
- 1 teaspoon Tabasco sauce (optional)
- 1 (20 ounce) jar spaghetti sauce
- 8 ounces pasta
Hot Chocolate Italian Style

Place shaved chocolate in a small saucepan over low heat and add 2 tablespoons milk and vanilla extract
- 4 oz. dark chocolate, shaved
- 1 1/2 cups milk
- 1 tablespoon sugar
- 3/4 tablespoon cornstarch
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/8 teaspoon sea salt
- Whipped cream, optional
Slow Cooker Oxtails

- 2 pkgs. Oxtails
- 3-4 Tbsp. Mustard
- 1-2 Tbsp. Brown Sugar
- 2-3 tsp. Minced Garlic
- 3-4 Tbsp. Paprika
- 3-4 Tbsp. Thyme
- 1/2 c. Chives
- Onion Salt & pepper to taste
Herb Baked Talapia

Heat oven to 400. Place tilapia on nonstick foil
- 4 4-6 oz Tilapia fillets
- 1/3 cup Grated Parmesan cheese
- 1/4 cup Low fat mayonnaise
- 2 Tbsp. Minced scallions
- 1/4 cup dry bread crumbs
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 1/4 tsp. salt
- 1/4 tsp. black pepper
Christmas Casserole

Brown sausage according to package and then drain any grease off
- 1 26 oz. bag of frozen has browns
- 12 eggs
- 1 cup milk
- 1 16 oz. bag of shredded cheddar cheese
- 1 pkg. of sausage (can use pre-cooked)
- 2 Tbsp. yellow mustard (or prepared dry mustard is better)
