Red Velvet Cake

Preheat oven to 350 degrees
- 2 cups All purpose flour
- 1 tsp. Baking soda
- 1 tsp. Salt
- 1 1/2 cups Sugar
- 1 cup Buttermilk
- 1 3/4 cups Vegetable oil
- 2 Eggs
- 1 tsp. Vanilla
- 2 oz. Red food coloring
- 1 tsp. Cider vinegar
- FROSTING
- 1 Pkg Cream cheese (8 oz) softened
- 1/2 cup 1 stick butter
- 1 box 1 lb. confectioners sugar minus 1/2 cup 1 tsp. Vanilla extract
Coffee Cup Cake

3 Tbsp. of the dry mixture in a big coffee mug Stir in 2 Tbsp of water
- 1 box Cake Mix - any flavor
- 1 box Angel Food Cake Mix (a MUST for recipe)
- Mix together then store in airtight container.
- 3 Tbsp. of the dry mixture in a big coffee mug and stir in 2 Tbsp of water.
Baked Ravioli

Boil and cook ravioli noodles according to pkg
- 1 bag of frozen Ravioli noodles
- 1 lb. Ground Beef (could add Italian sausage as well)
- 1 can diced tomatoes
- 1 can crushed tomatoies
- 1-2 cups of Italian cheese, shredded
- Garlic and/or Italian seasonings to taste
Hamburger Soup -

1. In a large saucepan, brown meat, drain excess fat
- 2 lbs ground beef
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon oregano
- 1/4 teaspoon basil
- 1/8 teaspoon seasoning salt
- 1 (2 ounce) package onion soup mix (for 3 or 4 servings)
- 6 cups boiling water
- 1 (8 ounce) can tomato sauce
- 1 tablespoon soy sauce
- 1 cup celery, sliced
- 1/4 cup celery leaves
- 1 cup sliced carrot
- 1/3 cup dried split peas
- 1 cup elbow macaroni

Chicken and Wild Rice Casserole

Very good but makes a huge casserole
- 1 (2.25 oz) pkg Sliced Almonds
- 2 (6.2 oz) boxes of fast cooking long grain & wild rice
- 1/4 cup Butter
- 4 celery ribs - chopped
- 2 med. onions - chopped
- 5 cups chopped cooked chicken
- 2 cans cream of mushroom soup
- 2 (8 oz) cans chopped water chestnuts drained
- 1 (8 oz) container sour cream
- 1 cup milk
- 1/2 tsp. salt
- 1.2 tsp. pepper
- 4 cups shredded (16 oz) cheddar cheese - divided
- 2 cups soft, fresh breadcrumbs

- 1 pkg. Instant Vanilla or cheesecake pudding
- 1 large can crushed pineapple (undrained)
- 2 medium/large cans mandarin oranges (drained)

Pork Roast - Honey Roasted

Heat oven to 325. Place pork roast on rack coated with Pam and place in shallow, foil-lined roasting pan
- 2-3 lb. pork roast
- 1/4 cup honey
- 2 Tbsp. Dijon mustard
- 2 Tbsp. crushed black peppercorns
- 1/2 tsp. dried thyme
- 1/2 tsp. coarse salt
Coconut Pudding Cake

Combine cake mix, pudding mix, eggs, water and oil in large bowl
- Topping:
- 1 package (18.25 ounce or so) yellow cake mix
- 1 package (3 1/2 ounce) vanilla or coconut instant pudding or pie filling
- 4 eggs
- 1 cup water
- 1/4 cup oil
- 1 cup flake coconut
- 1 (3 1/2 ounce) package of instant coconut pudding mix
- 1 cup of cold milk
- 1 cup of coconut flakes
- 4 ounces of Cool Whip
Pumpkin Fritters
