  • 2 cups refrigerated sauerkraut - rinsed

Heat oven to 450. Arrange plum tomatoes and peppers, cut sides down, in an oiled baking dish

  • 6 ripe plum tomatoes - halved lengthwise
  • 2 large red bell peppers, seeded, quartered lengthwise
  • 1 Tbsp Olive Oil
  • 1 medium yellow onion - chopped
  • 3 garlic cloves - minced
  • 2 tsp. ground cumin
  • 1 tsp. sweet paprika
  • 1 tsp salt 0 or more to taste
  • 1/2 tsp. ground black pepper
  • 1/4 tsp cayenne or to taste
  • 2-3 cups chicken broth
  • Corn kernels from 1 ear of corm - reserve 1/4 cup for garnish
  • 4 Tbsp chopped cilantro
