Roasted Brussels Sprouts with browned butter

Heat oven to 400. On a large rimmed baking sheet, toss Brussels sprouts, onions, oil, 1/2 tsp
- 2 lbs. Brussels sprouts - halved
- 2 red onions - cut into 1/2 inch thick wedges
- 2 Tbsp Olive Oil
- Kosher Salt and pepper
- 4 Tbsp unsalted butter
- 1/3 cup sliced almonds
- 1/4 cup golden raisins (optional)
- 2 Tbsp fresh lemon juice
Almond Pound Cake

Preheat oven to 350 degrees
- 4 Eggs, large
- 1 tbsp Almond extract
- 1 package Classic white cake mix
- 2 tbsp Confectioners' sugar
- 1 (3.4 oz.) package Vanilla instant pudding and pie filling
- 1/3 cup Vegetable oil
- 3/4 cup Almonds
- 1 cup Water
Cashew Chicken (diabetic)

Place chicken in a large resealable food storage bag
- 10 oz. boneless, skinless chicken breasts cut into 1x1/2 inch pieces (cubed)
- 1 Tbsp. cornstarch
- 1 Tbsp. dry white wine
- 1 Tbsp. reduced sodium soy sauce
- 1/2 tsp. garlic powder
- 1 tsp. vegetable oil
- 6 green onions - cut into 1 inch pieces
- 2 cups sliced fresh mushrooms
- 1 red or green bell pepper, cut into strips
- 1 6 oz can sliced water chestnuts, rinsed & drained
- 2 Tbsp. hoisin sauce
- 2 cups hot cooked rice
- 1/4 cup cashews - toasted
Granola - Granola Bars

Preheat oven to 350. Line a 9x13 pan with wax or parchment paper
- 2 cups quick rolled oats
- 1 cup packed light brown sugar
- 1/4 wheat germ
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1 cup currants
- 1 cup dried apricots - chopped
- 1 tsp vanilla extract
- 1/4 cup honey
- 2 Tbsp maple syrup
- 2 Tbsp vegetable oil

- 2 cups Pineapple juice
- 2 cups Cranberry juice cocktail
- 1/2 cup Fresh lime juice
- 1 11.5 oz bottle Apricot nectar
- 9 slices Lime
- 2 12 oz cans Ginger ale
Almond Cookies - Low Carb

- Low Carb Almond Sugar Cookies
- 1-1/4 cup almond flour
- 1 cup Splenda (I will be using stevia instead)
- 1/4 cup butter, at room temperature
- 1 large egg
- 1 teaspoon vanilla
- additional Splenda, for decorating

- 1 small can mushrooms
- 1 Tbsp. butter
- 1 small onion - chopped
- Salt & pepper to taste
Extra Strong Chocolate

- 1 1/2 cups Milk
- 1 / 2 cup Good quality semisweet chocolate chips or
- 1/2 cup Broken chocolate bits
- 2 Tbsp. Ground chocolate powder (Ghirardelli)
- Brandy or cognac if you prefer
