Shrimp & Grits - Charleston

- SHRIMP GRAVY:
- 1-3/4 lb. peeled raw shrimp, shells reserved for stock*
- 1/4 cup butter (if needed for additional fat for sautéing)
- 3 to 4 tbsp. fresh lemon juice
- 2 green onions, chopped
- 1/2 small Vidalia (or other type) onion, chopped
- 1 garlic clove, finely minced
- 6 slices bacon (cut into thin strips)
- 2 to 3 tbsp. finely chopped red (or green) pepper OR 1 small jar diced pimiento
- 1 to 1-1/2 cup shrimp stock (SEE RECIPE BELOW)
- 1 to 2 tbsp. flour
- Salt, pepper, Tabasco

To blanch asparagus: Remove fibrous stems from asparagus by snapping them off
- 1 lb Chicken Breasts (2 large)
- 1 lb asparagus blanched*
- 3/4 tsp sea salt, divided and black pepper to taste
- 3 Tbsp Unsalted Butter divided
- 2 Tbsp Olive Oil divided
- 16 oz button mushrooms thickly sliced
- 1 small or 1/2 medium yellow onion finely diced
- 2 large garlic cloves minced
- 2 Tbsp fresh parsley finely chopped, plus to garnish
- 1 1/2 cups Madeira Wine sweet white wine*
- 1 1/2 cups low sodium beef stock or broth
- 1/2 cup Whipping Cream heavy or regular
- 1 cup mozzarella cheese shredded

Bake at 350 degrees for 15-20 minutes
- 3 smashed overripe bananas
- 1/3 cup apple sauce
- 2 cups oats
- 1/4 cup milk
- 1 tsp. vanilla
- 1 tsp. cinnamon

Bake 350 for 30-35 mins. Mix milk and yeast, flour, sugar & salt and let rise for 2 hours

Meatloaf

Oven 375 degrees Mix well, make into baseball size balls, bake at 375 for 35-45 minutes
- 1 1/2 pound lean ground beef
- 1 pound bulk ground sausage
- 1 cup quick oats (yes... oatmeal!)
- 1 envelope Onion Soup Mix
- 2 eggs
- 1/2 cup milk
- 1/2 cup ketchup (I was out, so I used tomato juice)
- 1/2 cup BBQ sauce

- 3 5 oz. cans tuna packed in water, well drained.
- 1/2 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup pickle relish
- 3/8 cup mayonnaise
- 3/8 cup Ranch dressing
- 3/4 tsp. Cajun seasoning
- 1/4 tsp. fresh lemon juice
- 1/4 tsp. black pepper
- 1/4 tsp. salt

- 2 lbs ground beef
- 2 eggs, beaten
- 3/4 C milk
- 1 tsp salt
- 1/2 tsp pepper
- 3 slices bread, crumbled or torn into small pieces
- 1/2 C diced onion
- 1 envelope dry Ranch Dressing mix
- 1/2 C ketchup

Heat oven to 375°F. In medium bowl, combine vegetables, chicken and soup; mix well salt & pepper
- 2 cups California blend or your favorite frozen mixed vegetables, thawed
- 1 cup diced cooked chicken
- 1 can (10 3/4 oz) condensed cream of chicken soup
- 1 can (16.3 oz) Pillsbury® Grands!® Flaky Layers refrigerated biscuits
Browned Butter Butterscotch Meringue Pie

Heat oven to 350. Melt 6 Tbsp butter in a small saucepan over medium heat
- 1 Graham cracker pie crust
- 3/4 cup packed brown sugar
- 2 Tbsp all-purpose flour
- 2 Tbsp cornstarch
- 2 cups whole milk
- 3 large eggs - separated
- 1/4 tsp. cream of tartar
- 1/2 tsp. pure vanilla extract
- 6 Tbsp butter - melted

- 1 pound Spaghetti Cooked & drained
- 1/2 cup Heavy cream
- 1/2 stick Butter
- 2 Tbsp. Olive Oil
- 8 Slices Bacon crumbled into large pieces
- 1/3 cup Dry white wine (Chablis)
