Pork Posole

Serves 4. Cal. 231; Protein 14
- 1 tsp. olive oil
- 12 oz. boneless pork shoulder, trimmed & cut into 1/2 inch pieces
- 1 cup chopped onion
- 4 garlic cloves, minced
- 1 1/2 tsp. ground cumin
- 1/2 tsp. ground red pepper
- 1/2 cup beer
- 2 cups unsalted chicken stock
- 1/2 cup salsa verde
- 1 28-oz can hominy - drained
- 1/4 cup cilantro leaves
- 4 radishes - sliced
- 4 lime wedges
Chicken & Avocado Salad

No mayo! Use as salad on top of greens or as sandwich filling
- 2 or 3 boneless, skinless chicken breasts
- 1 avocado
- 1/4 chopped onion
- juice of 1/2 a lime
- 2 Tbsp cilantro
- salt and pepper to taste.
Pork Chops

In crockpot layer pork chops, add Cream of Chicken soup, then sprinkle dry Ranch dressing all over
- Pork Chops
- 1 Pkg. of DRY Ranch Dressing.
- Cream of Chicken Soup (usually 1 can - more depending on how many chops you are cooking).
- Cover and cook on high for 4 hours OR Low for 6 hours.
- The pork chops come out very tender and the flavor is amazing! You also get a good gravy for mashed potatoes
Homemade Bisquick Baking Mix

Use a pastry blender to cut in shortening
- 8 cups All purpose flour
- 1/3 cup baking powder
- 8 tsp sugar (optional)
- 2 tsp salt
- 1 cup shortening
Baked Vidalia Onion Dip

Preheat oven to 375 In 1 quart casserole, combine all ingredients
- 1 cup Vidalia Onion chopped
- 1 cup Grated Parmesan cheese or shredded
- Swiss - about 4 oz.
- 1 cup Mayonnaise
- 1 clove Garlic - finely chopped -
- optional Hot pepper sauce to taste
