Gnocchi Cauliflower Mac & Cheese

You could also add some mozzarella and provolone shredded cheese
- 1 medium head cauliflower, broken into florets (about 3 cups)
- 16 ounces mini gnocchi
- 1 tablespoon butter
- 1 tablespoon minced garlic
- 1 tablespoon all-purpose flour
- 1 1/2 cups 2% milk
- 6 ounces cheddar cheese, shredded
- Salt and pepper, to taste
- 1/4 cup Panko breadcrumbs
Sauerkraut Soup

In a 4-6 quart slow cooker, blend Cream of Mushroom Soup, Cream of Chicken soup, water, and chicken broth
- 1 (10 oz) Can Condensed Cream of Mushroom Soup
- 1 (10 oz) Can Condensed Cream of Chicken Soup
- 2 1/2 cups Water
- 4 cups Chicken Broth
- 1/2 lb. Sauerkraut
- 1 Onion - finely diced
- 1 (15 oz) can Carrots - drained
- 1 (15 oz) can sliced potatoes - drained
- 1 lb. smoked sausage of your choice - sliced
- 1 tsp. Dried dill weed
- 1 tsp. minced garlic (optional)
- Salt & Pepper to taste
Riesling Peaches

Appetizer/topping for ice cream/dessert
- 2 cups peeled & chopped fresh ripe peaches (about 2 large)
- 1/2 cup Riesling wine
- 1-2 Tbsp. light brown sugar
- 1 Tbsp. apple cider vinegar
- 1 tsp. freshly ground black pepper
- Pinch of kosher salt
- Garnish: Fresh thyme springs
Chicken Alfredo Casserole

Weight Watchers Points: 15 Serves 6
- 2 cups of dry pasta
- 1 15-16 oz jar of Alfredo sauce
- 1-2 cups of cooked chicken, shredded or chunked
- 1/2 cup of chicken broth
- 5 oz of shredded Parmesan cheese
- 2 cups of shredded mozzarella cheese (8 oz bag)
- 1-1/2 tsp of minced garlic
- Add salt and pepper to taste

- 1 pound smoked sausage, sliced into round pieces (I use turkey)
