Whole Wheat Waffles

They're so crisp and light, no one will ever suspect they're made with 100% whole wheat flour!
- 1 1/2 cups King Arthur 100% White Whole Wheat Flour or Premium Whole Wheat Flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 1 large egg
- 1 1/2 cups lukewarm milk
- 1/3 cup melted butter or vegetable oil
Cajun Shrimp Quiche

Preheat oven to 325 degrees
- premade frozen pie crusts {unbaked}
- 4 large eggs
- 1 1/4 cup half n’ half
- 2 stalks celery, minced
- 3 green onions, minced
- 1 green bell pepper, small diced
- 2 jalapenos, seeded and minced
- 1 1/2 cups grated sharp cheddar cheese
- 4 tbsp unsalted butter, melted
- 1 tbsp Tony Chachere’s Cajun Seasoning
- 1 tbsp Old Bay
- 1 lb raw shrimp, peeled, deveined and tails off OR 1.5 lbs raw crawfish
- 1 large tomato, thinly sliced
Eggplant Parmesan

Preheat oven to 350 degrees F (175 degrees C)
- 3 eggplant, peeled and thinly sliced (3 small, 2 medium)
- 2 eggs, beaten
- 4 cups Italian seasoned bread crumbs
- 6 cups spaghetti sauce, divided
- 1 (16 ounce) package mozzarella cheese, shredded and divided
- 1/2 cup grated Parmesan cheese, divided
- 1/2 teaspoon dried basil
Sesame Noodles

1.Bring a pot of lightly salted water to boil
- 1 (16 ounce) package linguine pasta
- 6 cloves garlic, minced
- 6 tablespoons sugar
- 6 tablespoons safflower oil
- 6 tablespoons rice vinegar
- 6 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 teaspoons chili sauce
- 6 green onions, sliced
- 1 teaspoon sesame seeds, toasted
- Some steamed broccoli would be a nice addition.

Jimmbo's Garlic Knots

1.Preheat oven to 450 degrees F (230 degrees C)
- 1 (10 ounce) can refrigerated pizza crust dough (I use ready made pizza dough)
- 1/3 cup olive oil
- 6 tablespoons finely chopped fresh garlic
- 5 tablespoons grated Parmesan cheese
- 3 tablespoons chopped fresh parsley
- 1 teaspoon crushed red pepper
- 1 teaspoon salt (use a coarse salt)
Peppermint Bark

This is a copycat recipe for William Sonoma's wonderful Peppermint Bark
- 12 ounces chocolate chips
- 1 lb white chocolate chips
- 1/2 teaspoon peppermint extract
- 1/2 cup peppermint candy, crushed
- I like Ghirardelli chocolate and white chocolate chips for this. I think it's important to use good quality chocolates for this recipe.
Pinto Beans with Bacon and Jalapenos

1 Heat oil in a medium skillet on high heat
- 1 Tbsp olive oil, grapeseed oil, or canola oil
- 2 to 3 whole jalapeño chile peppers
- 2 to 3 thick-cut slices of bacon
- 2 cups of chopped onion
- 2 medium clove of garlic, minced
- 4 cups of cooked pinto beans (2 15-ounce cans, rinsed and drained)
