Maple Carrot Cupcakes

In a large bowl, combine the first six ingredients
- FROSTING:
- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 4 eggs
- 1 cup canola oil
- 1/2 cup maple syrup
- 3 cups grated carrots (about 6 medium)
- 1 package (8 ounces) cream cheese, softened
- 1/4 cup butter, softened
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- Chopped walnuts, optional (toasted)
Chocolate Bread

1. Preheat oven to 325 °F;
- 2 1/4 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups milk
- 1 cup vegetable oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 tablespoon instant espresso granules dissolved in 1 tablespoon hot water, optional (see note section below)
- 2 cups semisweet chocolate morsels, plus 2 tablespoons flour

A friend shared this recipe years ago and I have been making them ever since
- 1 large cucumber, sliced (can use English or Kirby cucumbers)
- 1 teaspoon salt
- 1 onion, thinly sliced
- 1 cup white sugar (I use 1/2 cup but if you like it sweeter add up to a cup)
