This is the best recipe for White Chicken Chili that I've found

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, crushed
  • 1 (4 ounce) can diced jalapeno peppers (I used only half of a can but if you like it really spicy use it all)
  • 1 (4 ounce) can chopped green chile peppers
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cayenne pepper
  • 2 (14.5 ounce) cans chicken broth
  • 3 cups chopped cooked chicken breast (a rotisserie chicken works well)
  • 3 (15 ounce) cans white beans (I used a mixture of white beans, rinsed and drained and I mashed one can of beans for a creamier texture)
  • 1 cup shredded Monterey Jack cheese
  • I also added one can of Mexicorn or add about a cup of frozen corn if desired
