Chicken with Mushrooms in a Light Balsamic Cream Sauce

1.Heat 2 tablespoons olive oil in a large non-stick skillet over medium-high heat
- 1/2 pound egg noodles (I use no yolks), cooked according to package directions
- 2 tablespoons extra virgin olive oil
- 2 large boneless skinless chicken breasts cut into half lengthwise so that you end up with 4 pieces of chicken
- Salt, black pepper, garlic powder
- 2 tablespoons butter
- 8 ounces button mushrooms, stems removed, cleaned, and sliced
- 3 garlic cloves, minced
- 1 small yellow onion, finely chopped
- 1/4 teaspoon dried thyme
- 2 tablespoons all purpose flour
- 1 1/2 cups chicken stock
- 1 tablespoon balsamic vinegar (do not substitute any other vinegar)
- 3 tablespoons half and half
- Fresh, chopped parsley for garnish
Cajun Cake

Preheat oven to 350 degrees; butter or spray an 11x7 baking dish and set aside

- 2 cups flour

- 1/2 17.3 ounce package frozen puff pastry, thawed (1 sheet)

- 1 tablespoon cornstarch

Fresh Corn and Tomato Salad

- 3 large fresh tomatoes
- 1/2 large onion or about 1 cup chopped ( I used a sweet onion)

- 1 1/2 cups heavy whipping cream

Pistachio Shortbread

1) Preheat the oven to 300°F
- 1 cup unsalted butter, at cool room temperature
- 1 box (3.4 ounces) instant pistachio pudding mix, Jell-O preferred for best color
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/8 to 1/4 teaspoon pistachio flavor,* optional
- 2 cups King Arthur Unbleached All-Purpose Flour
- 2/3 cup shelled, finely chopped pistachio nuts, optional
- Use this flavor sparingly; it's strong, and a little goes a long way.
- I used 1 tsp. vanilla flavoring in place of the pistachio
