Tuna Apple Salad

Place apple chunks in a bowl and sqeeze lemon juice over them
- 9 1/4 oz (or larger) can Star-Kist tuna or 2 (6 1/2) oz
- can,drained
- 1 medium apple,cut into cubes
- 2 stalks celery,chopped
- 1/3 cup walnuts,coarsely,chopped
- 1/4-1/3 cup mayonnaise or salad dressing
- lemon juice
Manhatten Turkey Chowder

1.Wash turkey legs under cold water;dry on paper towels
- 4 turkey legs (about 3 1/2 lbs)
- 4 whole cloves
- 1 tablespoon olive oil or salad oil
- 4 small white onions,peeled and chopped
- 2 cans (10 1/2-oz size) condensed chicken broth,
- undiluted
- 1/2 clove garlic,crushed
- 1/2 cup coarsly,chopped celery
- 4 parsley springs,chopped
- 1 teaspoon dried thyme leaves
- 1/2 teaspoon saffron threads (optional)
- 1 1/3 cups dry white wine
- dash sugar
- 1/2 teaspoon salt
- 1 can (1lb) whole tomatoes,undrained
- 2 cups cut-up pared potatoes
Skillet Spaghetti

Combine first 7 ingredients,3 cups water,and 1 teaspoon salt
- 1 lb ground beef
- 1 18 oz. can tomato juice
- 1 6-oz. can tomato paste
- 2 tablespoon minced dried onion
- 1 1/2 teaspoon chili powder
- 1 teaspoon garlic salt
- 1 teaspoon dried oregano,crushed
- 1 7-oz. package spaghetti
- 7 tablespoons grated parmesan cheese
Tasty Beef Stew

In 8 qt. heavy pot,heat oil over medium high heat
- 2 tablespoons vegetable oil
- 4 lbs,beef stew meat,cut in 1" cubes
- 1 10 1/2 oz. can condensed onion soup
- 1 cup water
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon ground sage
- 6 medium carrots
- 5 medium potatoes,cut to fit food chute
- 3 medium onions,halved
Escarole Soup

Discard coarse outer leaves of escarole,wash,drain and stack tender green leaves and cut into strips about 1/4 inch...
- 1 head escarole
- 1/4 cup shell or elbow macaroni
- Boiling Salted water
- 2 tablespoons butter or margarine
- 2 tablespoons finly chopped onion
- 4 cups Brown Stock or 2 cans regular strenght chicken broth
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon thyme leaves,crumbled
- Salt and pepper
- Grated Parmesan Cheese
Pepper Steak Chinese Style

Trim steak of excess fat and place meat in freezer 15 minutes to make slicing easier
- 2 lbs boneless beef round steak,1to 1 1/2 inches thick
- 3 tablespoons cornstarch
- 1 taespoon sugar
- 1/4 cup soy sauce
- 5 tablespoons vegetable oil
- 2 medium green peppers,cored,seeded and cut in 1/4 inch lenght strips
- 1 1/2 to 2 cups hot beef broth
Rigatoni With Sausage Sauce

Remove casings from sausage;crumble meat
- 1/2 lb. mild Italian Sausage
- 1/4 cup butter or margarine
- 1/2 lb (about 2 1/2 cups) rigatoni or mastacciol
- Salted water
- 3/4 cup whipping cream
- 1/4 cup each dry white wine and grated Parmesan cheese
- Grated nutmeg
- Additional grated Parmesan Cheese

- 1 cup chicken broth

- 1/2 cup water

- 1/4 teaspoon black pepper
- 8 oz small pasta,such as small shells or wagon whells
- 3 cups boiling water
