Sausage & Pepperoni Pizza Puffs

Grease a 24-cup mini muffin pan
- 3/4 cup flour
- 3/4 tsp. baking powder
- 1/2 tsp. garlic powder
- 1/2 tsp. oregano
- 1/2 tsp. italian seasoning
- 3/4 cup milk
- 1 egg. lightly beaten
- 1 cup shredded mozzarella
- 1/2 cup turkey pepperoni, cut into small pieces
- 4 oz. sausage, cooked and crumbled
- 1/2 cup pizza sauce
Shrimp Francesca

Preheat oven to 375. Lightly grease baking dish
- 1 lb. shrimp, peeled
- 1 can artichoke hearts, drained
- Sliced mushrooms
- 1/3 cup Italian seasoned bread crumbs
- 1 T. chopped fresh parsley
- 1 lemon, juiced
- 1/4 cup butter
- Garlic powder w/parsley
- Shredded Parmesan
Lightened Shrimp Creole

In a large skillet heat the olive oil over medium heat
- 2 tsp olive oil
- 1 medium onion, chopped
- 1/2 cup green bell pepper, chopped
- 1/2 cup celery, chopped
- 2 cloves of garlic, minced
- 14-ounce can of diced tomatoes
- 8 oz tomato sauce
- 1/4 teaspoon of cayenne pepper
- 1/4 tsp Cajun Seasoning such as Slap Your Mama (more or less to taste)
- 1 bay leaf
- 1 tbsp of all purpose flour (1 tsp corn starch for gluten-free)
- 2 tbsp water
- 1 lb of large shrimp, peeled and deveined
- 2 tsp Worcestershire sauce
- 2 tsp hot sauce, to taste
- 1 medium scallion, sliced
- 2 tbsp fresh parsley, chopped
- salt to taste

- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 3 large eggs

Slow Cooker Maple Dijon Chicken Legs or Thighs

- 8 chicken legs (fatty parts of skin removed), or 4 to 6 thighs if preferred
- 1/4 cup maple syrup
- 1/4 cup Dijon mustard
- 2 tablespoons balsamic vinegar

Rosemary Chicken Salad Sandwiches

Combine first 9 ingredients, stirring well
- 3 cups chopped roasted skinless, boneless chicken breasts (about 3/4 pound)
- 1/3 cup chopped green onions
- 1/4 cup chopped smoked almonds
- 1/4 cup plain fat-free yogurt
- 1/4 cup light mayonnaise
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon Dijon mustard
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
