Fantastic Taco Casserole

1 Brown ground beef and drain
- 1 lb ground beef
- 1 (1 1/4 ounce) package taco seasoning
- 1 (15 ounce) can refried beans
- 2 cups monterey jack cheese, divided (or mixed cheddar, jack etc.)
- 1 cup salsa (I prefer mild, but if you would like to kick it up a notch, go for it)
- 2 green onions, chopped
- 1 (2 1/3 ounce) can sliced black olives
- 1 tomato, chopped
- 2 cups tortilla chips (coarsely crushed or chopped)
Asparagus Chicken Crepes

1.For crepe batter, beat eggs and milk in a small mixing bowl
- 2 eggs
- 3/4 cup milk
- 1/2 cup all-purpose flour
- 3/4 teaspoon sugar
- 1/2 cup condensed cream of chicken soup, undiluted
- 1 teaspoon Worcestershire sauce
- 1 dash ground nutmeg
- 1 cup chopped cooked chicken
- 1 cup cut fresh or frozen asparagus, thawed
- 1/3 cup chopped fully cooked ham
- 1/2 cup grated Parmesan cheese, divided
- 1/2 cup heavy whipping cream, whipped
- 1/3 cup mayonnaise
Slow Cooker Chicken & Pork Brunswick Stew

1. Sauté onions and garlic in hot oil in a skillet over medium-high heat 3 to 5 minutes or until tender
- 2 large onions, chopped
- 2 garlic cloves, minced
- 1 tablespoon vegetable oil
- 1 1/2 tablespoons jarred beef soup base
- 1 cup chicken broth
- 1 cup water
- 1 rotisserie chicken, deboned and coarsely chopped/shredded
- 1 (28-oz.) can fire-roasted crushed tomatoes
- 1 (12-oz.) package frozen white shoepeg or whole kernel corn, thawed
- 1 (10-oz.) package frozen cream-style corn, thawed (or 1 8 oz. can cream style corn)
- 1 (9-oz.) package frozen baby lima beans, cooked
- 1 (12-oz.) bottle chili sauce
- 1-1/2 tablespoons brown sugar
- 2 tablespoons yellow mustard
- 2 tablespoons Worcestershire sauce
- 1 teaspoon coarsely ground pepper
- 1 pound chopped barbecued pulled pork (without sauce)
- 1 tablespoon fresh lemon juice
- Hot sauce (optional)
5 Minute Individual Potato Gratins

Preheat oven to 375. Spray about 12 muffin tins with vegetable spray
- Vegetable spray
- 2-3 russet or yukon gold potatoes, peeled and thinly sliced
- 1/2 cup shredded swiss cheese
- 2-3 green onions, chopped
- Pepper
- Salt, if desired
- 2 T. each light cream or milk
Chicken & Cheese Quesadillas

1. Drain salsa in mesh strainer over bowl
- 1 jar prepared salsa (16-ounces)
- Vegetable oil
- 1 rotisserie chicken , skin discarded, meat shredded into medium bite-sized pieces (about 3 cups)
- 1 teaspoon taco seasoning (from packet)
- 1/4 cup minced canned pickled jalapeños
- 1 1/2 cups shredded Mexican-style cheese
- 4 flour tortillas (12-inch)
- Sour cream for serving
Perfect Pesto Sauce

Place all ingredients in food processor and blend to desired consistency
- 3 cups fresh basil, packed tightly
- 2 roma tomatoes, chopped
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- 3 T. pine nuts, toasted
- 2 garlic cloves, chopped
- 2 T. chicken broth
- 1 tsp.lemon juice
- 1 tsp. salt
- 1/2 tsp. pepper
K's Tomato Pie

1 Preheat oven to 400° F
- 1 cup Mayonnaise
- 9 slices Fully Cooked Naturally Smoked Imported Bacon , cooked
- 1 lb Roma tomatoe , thinly sliced
- 1/2 cup Green onion , diced
- 8 oz Cream cheese , softened
- 1 Refrigerated pie crusts, 15 oz
- 1 cup Crème fraîche , shredded
K's Sausage Cornbread Stuffing

Cook sausage until browned; remove and drain on paper towels
- 1 lb. Neese's Sausage
- 2 cups celery, chopped
- 1 cup onion, chopped
- 4 cups (or more) homemade Cornbread, crumbled (Cover with towel and let sit for 1-2 days to dry out some)
- 1 cup Pep.Farm Herb Seasoned Stuffing, if desired
- 6 oz fresh mushrooms, chopped
- 3/4 Granny Smith apple, cut into cubes
- 1/4 cup fresh parsley, chopped
- 1 tsp. poultry seasoning
- 2 cups (or more) chicken broth, warmed with 1-2 T. of Better than Bouillon Turkey base
- 1 egg, lightly beaten
Peppery Monterey Jack Pasta Salad

1. Cook pasta according to package directions, omitting salt and fat
- 6 ounces uncooked acini di pepe pasta (about 1 cup)
- 2 1/4 cups diced plum tomato (about 14 ounces)
- 1/3 cup capers, rinsed and drained
- 1/4 cup finely chopped red onion
- 1/4 cup sliced pickled banana peppers
- 1/4 cup chopped fresh parsley
- 2 tablespoons cider vinegar
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon dried oregano
- 1/8 teaspoon salt
- 4 ounces Monterey Jack cheese, cut into 1/4-inch cubes
- 1 (16-ounce) can navy beans, rinsed and drained
- 3-4 ounces salami or ham, chopped
- 1 garlic clove, minced
Impossibly Easy Cheesy Meatball Pie

1 Heat oven to 400°F. Spray 9-inch glass pie plate or deep-dish pie plate with cooking spray
- 1 1/2 cups refrigerated shredded hash brown potatoes (from 1-lb 4-oz bag)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup frozen sweet peas, thawed and drained
- 12 frozen meatballs (from 16-oz bag), thawed and cut in half
- 1 cup shredded Cheddar cheese (4 oz)
- 1/2 cup Original Bisquick® mix
- 1 cup milk
- 2 eggs
