Pesto - Best Recipe Ever!
- 1/4 cup pine nuts (maybe onlly use 1/8 cup), toasted
- 3 medium garlic cloves
- 2 cups packed basil
- 2 T fresh parsley
- 7 T EVO
- Salt, to taste
- 1/4 cup grated parmesan
Place the toasted nuts, garlic, basil, parsley, oil and 1/2 tsp salt n a food processor adn process until smooth.
BE SURE to bruise the basil and parsley leaves first before adding to the food processor.
Transfer to a bowl adn stir in cheese.
If you are not using right away, place a layer of plastic wrapover the top and refrigerate for up to three days.
if you're using on pasta, be sure to mix about a 1/4 cup of reserved pasta cooking water into teh pesto before you toss through the pasta. Enjoy!
