Sliced Steaks with Kale Caesar Salad

FYI, this recipe contains a raw egg yolk, so be sure to use a pasteurized egg
- 4 flat iron steaks (6 to 8 oz. each), at room temperature
- Coarse salt and pepper
- 1/3 cup EVOO, plus more for coating
- 1 lemon, juiced
- 2 cloves garlic, grated or pasted
- 1 tsp. anchovy paste
- 1 tsp. worcestershire sauce
- 1 tsp. dijon mustard
- 1 organic egg yolk
- A generous handful grated pecorino-romano cheese plus more for shaving
- 1 bunch flat-leaf tuscan kale stems discarded, leaves chopped or sliced
- 1 romaine heart, chopped or sliced
Lemon-Thyme Tea Bread

In a microwave-safe bowl, combine milk and thyme
- GLAZE:
- 3/4 cup milk
- 1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 2 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 1/4 teaspoon salt

- For crust
- 1 1/4 cups graham cracker crumbs from 9 (2 1/4- by 4 3/4-inch) crackers
- 2 tablespoons sugar
- 5 tablespoons unsalted butter, melted
- For filling
- 1 lb strawberries, halved (3 1/2 cups)
- 1 tablespoon finely grated fresh lime zest (from 3 limes)
- 1/4 cup fresh lime juice (from 2 limes)
- 1 (14-oz) can sweetened condensed milk
- 2 tablespoons tequila
- 2 tablespoons triple sec, Cointreau, or other orange-flavored liqueur
- 1 1/2 cups chilled heavy cream
- Garnish: small strawberries
Vermont Cheddar Spread

In a medium bowl with an electric mixer, beat the cream cheese and butter until well blended
- 1 (8 oz) package cream cheese, room temperature
- 4 Tbs. butter, room temp.
- 1/2 lb. sharp white cheddar cheese, grated
- 3 Tbs. chopped fresh chives or scallions
- 1/2 tsp. dry mustard
- pinch of cayenne pepper

- 1 oz. vodka
- 1/2 oz. triple sec

Tuna Parmesan Salad

Cook pasta and drain. Rinse with cool water
- 2 cups elbow macaroni
- 1 cup mayou
- 1/3 cup parmesan cheese
- 2 Tbs. milk
- 1 tsp. hot pepper sauce
- 1 tsp. lemon pepper seasoning
- 1/2 tsp. garlic powder
- 2 can tuna, drained
- 1 pkg. frozen chopped broccoli, thawed
The Devil's Shrimp

Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente
- Salt and pepper
- 1 pound tagliatelle or fettuccine pasta
- 1/4 cup extra-virgin olive oil (EVOO)
- 3 flat fillets anchovies or 1 teaspoon anchovy paste
- 1 hot red or green chile, finely chopped
- 4 cloves garlic, finely chopped
- 1/2 cup dry white wine or dry vermouth
- 1/2 cup chicken or fish stock
- 1 28 ounce can italian tomatoes in puree
- 1/2 teaspoon dried marjoram or oregano
- 3/4 pound large shrimp--deveined, tails discarded, halved lengthwise, rinsed and patted dry
- Juice of 1/2 lemon
- 2 tablespoons butter
- 1/2 cup (about 10 to 12) basil leaves, shredded or torn
- A few sprigs mint, finely chopped
Wild Berry Mojitos

In a 12-oz. highball glass, muddle mint, simple syrup, wild berries and lime juice
- 1-1/2 oz. Bacardi Light Rum
- 3-4 each of fresh blackberries, blueberries and red raspberries
- 8-12 fresh mint leaves

- 1 oz. simple syrup
- soda water
- mint sprig for garnish
Blueberry Muffins with Lemon-Cream Cheese Glaze

1. Preheat oven to 450º. Stir together first 4 ingredients
- 3 1/2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1 1/2 teaspoons salt
- 3 large eggs
- 1 1/2 cups milk
- 1/2 cup butter, melted
- 2 cups frozen blueberries*
- 1 tablespoon all-purpose flour
- Lemon-Cream Cheese Glaze
- Garnish: lemon zest
Homemade Curry

When blended and crushed, these spices make a wonderfully aromatic curry paste, both intense and vibrant in colour
- Recipe "au pif":
- 1 1/2 lbs Sea Bass filet (2 big nice filets cut in nice chunky pieces - skin removed) or chicken or shrimp
- 1/2 cup chicken broth
- 1/2 cup of 15% "Champetre" or "Country-style" cream (thicker than regular 15% cream, or use 35% cream)
- 1/3 cup coarsely chopped fresh coriander
- Dry Spices:
- 1 tsp. minced garlic
- 1 tsp. minced ginger
- 1 tsp. ground paprika
- 1 tsp. tumeric (or curcuma)
- 1 tsp. chili powder
- 1 tsp. ground cumin
- 1 Tbs. ground garam masala
- 1 tsp. coarse sea salt
- 1 Tbs. tomato paste
- juice of 1/4 lemon
- 1 Tbs. olive oil
