In a medium saucepan, melt 2 tablespoons butter over medium heat
- 4 tablespoons butter, softened
- 1 shallot, finely chopped
- 1 tablespoon cornstarch
- 2 cups beef broth
- 1 pound sliced roast beef
- 1 baguette, split lengthwise and sliced crosswise into 4 sections
- 4 ounces sliced pepper Jack cheese
Mexican Shrimp Cocktail

1. Stir together first 13 ingredients in a bowl
- 1 pound peeled, medium-size cooked shrimp, deveined and halved
- 3 plum tomatoes, diced
- 3 jalapeño peppers, seeded and diced
- 1 small sweet onion, diced
- 1 garlic clove, minced
- 1/2 cup fresh lime juice
- 1/4 cup extra virgin olive oil
- 1/4 cup chili sauce
- 1/4 cup spicy tomato juice
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 cup chopped fresh cilantro
- 2 tablespoons hot sauce
- 2 tablespoons prepared horseradish
- 1 avocado, diced
- Kosher salt and freshly ground black pepper

Potato and Lobster Shoreman's Pie

Select pot suitable for holding enough water to cover lobsters completely

- 2 whole lobsters
- 3 lbs. Idaho potatoes, peeled, cut into large pieces

- 1/2 cup milk

- 3 slices bacon, chopped
- 1 cup panko
- 3 4 ounce cans diced jalapenos, drained
- 2 8 ounce packages cream cheese, at room temperature
- 1 cup mayonnaise
- 1/2 cup shredded cheddar
- 1 small fresh jalapeno, seeded and chopped
- 1 tablespoon grated Parmesan
- Tortilla chips, for dipping

- 1/4 teaspoon ground cumin
- 3 1/2 tablespoons yellow mustard
