- 1/4 cup orange juice
- 1/2 rip avocado (reserve the other half for the salad)
- 1/2 cup sour cream
- 1/4 cup loosely packed cilantro leaves
- 1/4 cup fresh lime juice
- 1/4 cup water
- 3/4 tsp. kosher salt
- 3/4 tsp. sugar
- 1/4 tsp. freshly ground black pepper
- 1/4 cup salad oil

Slow Cooker Salisbury Steak

A great Sunday dinner! Served with mashed potatoes and topped with french onions
- 2 pounds lean ground beef
- 1 (1 ounce) envelope dry onion soup mix
- 1/2 cup Italian seasoned bread crumbs
- 1/4 cup milk
- 1/4 cup all-purpose flour2 tablespoons vegetable oil
- 2 (10.75 ounce) cans condensed cream of chicken soup
- 1 (1 ounce) packet dry au jus mix
- 3/4 cup water
Tomato-Pesto Tart

1. Preheat oven to 400F. Spray rimmed baking sheet with cooking spray; set aside
- PAM Original No-Stick Cooking Spray
- 1/2 pkg (17.3 oz each) frozen puff pastry, thawed according to package directions (17.3-oz. pkg = 2 sheets)
- 1/2 cup prepared basil pesto
- 1 cup shredded part-skim mozzarella cheese (1 cup = 4 oz)
- 1 can (14.5 oz each) Hunt's Whole Peeled Tomatoes, drained, cut into 1/4-inch-thick slices
- Thinly sliced fresh basil, optional
Shrimp Salad

Combine shrimp with celery, onion, lemon juice, mayonnaise, and salt and pepper to taste
- 2 cups cooked shrimp, halved lengthwise and chilled
- 1 cup thinly sliced celery
- 1 Tbs. finely minced onion
- 1 Tbs. fresh lemon juice
- 1/2 cup mayonnaise
- salt and pepper to taste
- Romaine lettuce or mixed greens
- thinly sliced tomatoes
- a few slices freshly cooked bacon, crumbled (optional)
String Beans in Italian Dressing

- String beans (amount as desired)
- small onion, minced
- garlic powder and salt to taste
- Italian salad dressing or oil and vinegar to taste
