Put the oranges, limes, sugar, and mint in a large rocks glass
- 2 teaspoons sugar
- 2 1/2 ounces white rum
- 1/2 orange, cut into 3 wedges
- 1/2 lime, cut into 3 wedges
- 1 or 2 sprigs fresh mint
- 1 cup crushed ice
Thyme's-Up Cocktails

In a small saucepan, melt the sugar in 1/2 cup water over medium heat to make a simple syrup
- 1/4 cup sugar
- 16 sprigs fresh thyme
- 4 lemons, juiced
- 2 cups vodka
- Ice
- 1 cup cava or other sparkling wine
Puff Pastry - Parmesan Ham Puffs

- 1 sheet puff pastry
- 1 1/2 cup Parmesan cheese, grated
- 1/2 cup mayonnaise
- 1/3 cup chopped shaved ham

French Onion Soup

- Soup:
- 3 Tbs. butter, cut into 3 pieces
- 6 large yellow onions (about 4 lbs.), halved and cut pole to pole into 1/4-inch thick slices
- table salt
- 2 cups water
- 1/2 cup dry sherry
- 4 cups chicken broth
- 2 cups beef broth
- 6 sprigs fresh thyme, tied with kitchen twine
- 1 bay leaf
- ground black pepper
- Cheese croutons:
- 1 small baquette, cut into 1/2-inch slices
- 8 oz. shredded Gruyere cheese (about 2 1/2 cups)
