- 1 lb hot sausage or 1 lb sweet Italian sausage
- 1 tablespoon olive oil
- 4 slices pancetta, chopped (can substitute bacon)
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground black pepper
- 1 lb linguine
- 4 large egg yolks
- 1/2 cup heavy cream
- 1 cup freshly grated parmesan cheese
- 1 tablespoon flat-leaf Italian parsley, chopped
- 1 teaspoon lemon zest, grated

Simple Savory Beef Wraps

On those busy nights, when there's barely time to sit down to dinner, these 30-minute beef wraps are the go-to rec
- 1 Cook the beef and garlic in a 10-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat.
- 2 Stir the concentrated broth in the skillet and cook until the mixture is hot and bubbling.
- 3 Place 1 leaf lettuce onto each tortilla. Spoon about 1/2 cup beef mixture down the center of each tortilla. Top each with 2 half slices tomato and 2 half slices onion. Wrap the tortillas around the filling.

- 10 ounces uncooked Italian sausage links, sliced Vi inch thick
- 3/4 cup chopped onions (1/2 medium)
- 2 cloves garlic, minced
- 1 26- to 28-ounce jar spaghetti sauce
- 1/4 teaspoon black pepper
- 1 cup mozzarella cheese, shredded (4 ounces)

This tastes exactly like the pasta e fagioli soup at the Olive Garden
- 2 lbs ground beef
- 1 onion, chopped
- 3 carrots, chopped
- 4 stalks celery, chopped
- 2 (28 ounce) cans diced tomatoes, undrained
- 1 (16 ounce) can red kidney beans, drained
- 1 (16 ounce) can white kidney beans, drained
- 3 (10 ounce) cans beef stock
- 3 teaspoons oregano
- 2 teaspoons pepper
- 5 teaspoons parsley
- 1 teaspoon Tabasco sauce (optional)
- 1 (20 ounce) jar spaghetti sauce
- 8 ounces pasta

Mama's Spicy Meatballs

Preheat oven to 350 degrees F
- Nonstick cooking spray
- 1/4 cup chili sauce
- 1/4 cup seasoned fine dry bread crumbs
- 2 tablespoons finely chopped onion
- 1 tablespoon grated Parmesan cheese or Romano cheese
- 1 tablespoon finely chopped, drained pepperoncini salad pepper
- 1 1/2 teaspoons fennel seeds, crushed
- 1 pound extra-lean ground pork
- 1 recipe Fresh Tomato Sauce
- 3 cups hot cooked broken lasagna noodles
Pumpkin Muffins

Put oven rack in middle position and preheat oven to 350F
- 1.5 cups all-purpose flour
- 1 tsp baking powder
- 1 cup canned solid-pack pumpkin (from a 15-oz can) (/ accidentally put the entire 15 oz. can in, with no ill effects at all)
- 1/3 cup vegetable oil
- 2 large eggs
- 1 tsp pumpkin-pie spice (a combo of cinnamon, nutmeg, cloves, ginger, and allspice)
- 1.25 cups plus 1 Tbsp sugar
- 1/2 tsp baking soda
- 1/2 tsp salt 1 tsp cinnamon
- Equipment: 12 foil or paper muffin liners; a muffin pan with 12 (1/2-cup) muffin cups
