In a large saucepan, combine the milk, rice, sugar and salt
- 3 1/2 cups 2% milk
- 1/2 cup uncooked long grain rice
- 1/3 cup sugar
- 1/2 tsp salt
- 1/2 cup raisins/cranberries
- 1 tsp vanilla
- Ground cinnamon
Enchilada's Fantastic

Preheat oven to 350°. In a large skillet, cook turkey until no longer pink
- 1 lb ground turkey
- 2 cups salsa or picante sauce
- 1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
- 1/2 tsp salt
- 2 tsp cumin, divided
- 1 (8 oz) package regular or light cream cheese, cubed
- 12 (6 in) flour tortilla, warmed
- 1 (14 1/2 oz) can petite diced tomatoes, undrained
- 1 cup shredded cheddar cheese
- Optional toppings: shredded lettuce, black olives, sliced avocados, sour cream
Spaghetti Pie

I. Preheat oven to 350°. 2
- 8 oz Spaghetti, cooked (about 1/2 a package)
- 2 Large Eggs, whisked
- 1/2 cup Parmesan Cheese. divided
- 1 lb Ground Turkey (you could also use ground beef or chicken)
- 2 tbsp Olive Oil
- 1/2 tsp Salt
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 2 cups tomato sauce or 1 (16 oz) jar Marinara Sauce
- 1 Cup Ricotta Cheese
- 1/2 tsp Italian Herbs
- 1 cup Mozzarella Cheese, grated
Roast Prime Rib Au Poivre

Position rack in center of oven and preheat to 450 ° F
- 1 9 lb prime rib beef roast (about 4 ribs), excess fat trimmed
- 2 tbs Dijon mustard
- 4 tsp minced garlic
- 2 tsp plus 1 tsp mixed whole peppercorns, coarsely crushed
- 1/3 cup minced shallots
- 3 1/2 cups canned beef broth
- 1/3 cup Cognac or brandy
Mustard-Seed-Crusted Prime Rib Roast with Dijon Creme Fraiche and Roasted Balsamic Onions

Using electric mixer, beat creme fraiche and cream in medium bowl to firm peaks
- 1/2 cup creme fraiche
- 1/2 cup heavy whipping cream
- 1/4 cup prepared white horseradish
- 1 cup plus 1 tsp Dijon mustard, divided
- 4 medium onions, cut into 3/4-inch wedges with some core attached
- 5 very large shallots (about 1 pound), quartered through root end
- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 1/2 tsp coarse kosher salt plus additional (for sprinkling)
- 4 garlic cloves, minced
- 1 9 1/2 bone-in standing prime rib roast, trimmed
- 2 tbsp yellow mustard seeds
- 1/4 cup brandy
- 2 cups low-salt beef broth

- 1/4 cup fresh lemon juice
- 2 tbs honey
- 2 tsp garlic, minced
- 1 tsp dried thyme
- 1/2 tsp kosher salt
- 1/2 tsp crushed red pepper flakes
- 2 tbs olive oil
- 4 boneless chicken breas halves
- 1 can (13.75 oz.) whole artichoke hearts, drained

- 1 cup finely chopped onion
- 1/2 cup crumbled feta cheese
- 1/2 cup grated Edam cheese
- 1/4 cup crumbled Roquefort cheese
- 2 tbs chopped fresh dill
- 2 tbs fresh breadcrumbs
- 1 large egg yolk
- 3 tbs olive oil
- 2 la-ounce packages ready-to-use spinach, coarsely chopped
BBQ Shrimp and Lime Avocado Toast

- 1/2 pound peeled and deveined raw shrimp
- 1 teaspoon brown sugar
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon chipotle chili powder
- 1/4 teaspoon onion powder
- 2 tablespoons unsalted butter
- 2 tablespoons BBQ sauce
- 2 garlic cloves, finely minced or pressed
- 2 avocados
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 lime, juiced
- 4 pieces of bread, toasted
- 2 ounces queso fresco cheese, crumbled

- 1 package (18-114 ounces) chocolate fudge cake mix
- 1 tsp vanilla extract
- 1/4 cup currant jelly, warmed
- 3/4 cup whipping cream
- 3 squares (1 ounce each) semisweet chocolate, chopped
- 1 can (16 ounces) vanilla frosting
- 1 carton (8 ounces) frozen whipped topping, thawed
- 2 pints fresh raspberries

- Use either Eye of Round Roast Beef or Bottom Round (Block-Cut) Roast Beef (I prefer the Eye of Round!)
