Cherry Supreme Pie

Preheat oven to 425 degrees Prepare pie shell
- 9 inch unbaked pie shell
- 1 can (1 lb.5 oz) cherry pie filling (I now buy 2 cans)
- 4 pkg. (3 oz) soft cream cheese
- 1/2 cup sugar
- 2 eggs
- 1/2 tsp. vanilla extract
- whipping cream
Fiesta Dip

Process first 7 ingredients in a food prosor 30 to 45 seconds or until smooth, stopping to scrape down sides
- 1 (8-oz.) package lowfat cream cheese, softened
- 1/2 cup nonfat plain yogurt
- 1/4 cup light mayonnaise
- 2 Tbsp. chopped fresh cilantro
- 1 1/2 tsp. lime juice
- 1/2 tsp. hot sauce
- 1/4 tsp. salt
- 1/2 cup chopped jarred roasted red bell peppers
- 2 Tbsp. finely chopped green onion

Pumpkin Cake

Mix ingredients in order listed
- 4 eggs, beat until foamy
- 2 cups sugar
- 1 1/4 cup oil
- 1 can pumpkin
- 3 cups flour
- 2 tsp cinnamon
- 2 tsp baking powder
- 2 tsp baking soda
- 1/4 tsp salt
Steusel Kuchen

For streusel: Mix first 4 ingredients in medium bowl
- Streusel:
- 1 cup flour
- 2/3 cup brown sugar
- 1/3 cup chopped walnuts
- 1/4 tsp salt
- 6 tbs (3/4 stick) unsalted butter, melted
- Cake:
- 2 medium sized Golden Delicious apples, peeled, halved, cored and cut into 1/8 inch slices
- 1/2 tsp cinnamon
- 1/8 tsp ground cloves
- 1 1/2 cups plus 2 tbs cake flour
- 1/3 cup cornstarch
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup plus 2 tbs unsalted butter (2 1/4 sticks), room temperature
- 2 cups powdered sugar
- 1 tbs finely grated lemon peel
- 1 vanilla bean, split lengthwise
- 3 large eggs plus 1 large egg yolk

- 1 fudge brownie mix (13-inch x 9-inch pan size)2 packages (13 ounces each) miniature peanut butter cups
- 4 cups cold 2% milk
- 2 packages (5.1 ounces each) instant vanilla pudding mix
- 1 cup creamy peanut butter
- 4 teaspoons vanilla extract
- 2 cartons (8 ounces each) frozen whipped topping, thawed

- 1 lb fresh green beans, cut into 1 inch pieces
- 1/2 cup water
- 1/2 cup thinly sliced shallots
- 2 cloves garlic, thinly sliced
- 1/4 tsp red pepper flakes
- 1 cup halved grape tomatoes
- 1 tbs red wine vinegar
- salt and pepper

- 2 large eggs, beaten
- 1/4 cup milk or water
- 1 cup all-purpose flour*
- 1/4 teaspoon salt

Tortilla Black Bean Casserole

In a large skillet, combine onions, green peppers, undrained tomatoes, picante sauce, garlic and cumin
- 2 cups chopped onions
- 1 1/2 cups chopped green peppers
- 1 (14 1/2 oz) can petite diced tomatoes
- 1 cup mild picante sauce
- 3 or 4 cloves garlic, minced
- 2 1/2 tsp cumin
- 2 (15 oz) cans black beans, drained and rinsed
- 8 (6 inch) tortillas
- 2 cups shredded mozzarella cheese
- Garnish: sliced tomatoes, shredded lettuce, green onions and sour cream
