Cornbread Financiers Recipe

1. Heat the oven to 425°
- 7 tbsp. unsalted butter, plus more for greasing
- 1 ⁄2 cup plus 1 tbsp. sugar
- 1 ⁄4 cup plus 3 tbsp. fine cornmeal
- 3 tbsp. all-purpose flour
- 2 tbsp. almond meal 1 tsp. kosher salt 3 large egg whites, lightly beaten
Panna Cotta

1. Add gelatin to milk and let bloom
- 1 tablespoon unflavored gelatin
- 1 cup milk
- 3 cups whipping cream
- 1/3 cup honey
- 1 tablespoon sugar
- Honey can be replaced with any other flavoring.
Chicken Florentine

- 2 chicken breasts
- Flour
- 4 tablespoons butter
- 2 shallots, diced
- 1 garlic clove, diced

Coffee Granita

- 1/4 cup coffee liqueur

- 1 Thai chile, such as prik kee noo, or 1 serrano chile, stemmed and thinly sliced
- Kosher salt
- 1-1/2 pounds ground turkey, preferably dark meat
- 1/2 cup chopped fresh mint leaves
- Freshly ground black pepper
- 1 head butter lettuce, leaves separated
