Roasted Red Pepper Salad

- 3 red bell peppers
- 2 orange bell peppers
- 1/4 cup olive oil
- 2 tablespoons drained capers
- 6 fresh basil leaves, chopped
- 2 garlic cloves, minced
- Salt and freshly ground black pepper
Chicken with Peruvian Chile Sauce

For the chicken: 1. Place an oven rack in the center of the oven
- Vegetable oil cooking spray
- 1 (4 to 5 pound) chicken, cut into 8 pieces
- 2 tablespoons vegetable oil
- Kosher salt and freshly ground black pepper
- 1 slice whole wheat sandwich bread, crust removed, cut or torn into 1/2-inch pieces
- 3/4 cup half-and-half
- 2 tablespoons vegetable oil
- 1 large or 2 small shallots, sliced

- 1/2 cup toasted hazelnuts, crushed, for garnish
