Jumbo Oatmeal Raisin Sandwich Cookies

Happy National Oatmeal Cookie Day! As you can tell, I pick and choose the food holidays I like to celebrate
- For the Buttercream:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 2 sticks unsalted butter
- 1 cup brown sugar, firmly packaged
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups Quaker Oats
- 1 cup raisins

- 1 cup unsalted butter
- 4 cups confectioners’ sugar
- 1 teaspoon ground cinnamon
- 3 teaspoons whole milk
Basil & Garlic Potatoes

1 Layer half the potatoes, garlic, basil and black pepper in a 3-quart shallow baking dish
- 11 medium potatoes (about 3 1/2 pounds), thinly sliced (about 11 cups)
- 4 cloves garlic, minced
- 2 teaspoons dried basil leaves, crushed
- 1/4 teaspoon ground black pepper
- 1 3/4 cups chicken broth
Elaine's Cranberry-Orange Pound Cake

Cake mix and instant pudding mix speed the prep of this irresistibly rich crimson-studded pound cake
- 1 package Betty Crocker SuperMoist golden vanilla or yellow cake mix
- 1 package (4-serving size) vanilla instant pudding and pie filling mix
- 1 cup water
- 1/2 cup butter or margarine, melted
- 1 teaspoon grated orange peel
- 4 eggs
- 1 1/2 cups fresh or frozen cranberries, chopped (do not thaw frozen cranberries)

Country Swiss Steak

1. Trim fat from meat. Cut meat into 4 serving-size pieces
- 1 pound boneless beef round steak, cut 3/4 to 1 inch
- 4 ounces spicy fresh bratwurst or other sausage, cut into 3/4-inch-thick slices (optional)
- 1 tablespoon cooking oil
- 1 small onion, sliced and separated into rings
- 2 tablespoons quick-cooking tapioca
- 1 teaspoon dried thyme, crushed
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 can (14.5 ounce size) chunky tomatoes with olive oil, garlic and spices, undrained
- 4 cups hot mashed potatoes
Coleslaw Dressing

- 1/2 cup sugar
- 1/4 teaspoon salt (or to taste)
- 1 Tablespoon white vinegar
- 1 Tablespoon white grated or pureed horseradish
- 1/4 teaspoon celery seed

- 2 1/8 cups all-purpose flour (about 10 1/2 ounces)
- 1/2 teaspoon table salt
- 1/2 teaspoon baking soda
- 12 tablespoons (1 1/2 sticks) butter, melted and cooled slightly
- 1 cup packed light brown sugar (7 ounces)
- 1/2 cup granulated sugar (3 1/2 ounces)
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla
- 2 cups (12 ounces) semisweet or milk chocolate chips
Autumn Apple Cake

I love apple everything and when I saw this cake had raisins in it I knew I had to try it
- 1 1/2 cups all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 1/2 teaspoon cinnamon
- Sprinkle of ground cloves (I added in the cloves)
- Sprinkle of nutmeg (I added in the nutmeg)
- 3/4 cup granulated sugar (use baker’s sugar if you have it on hand)
- 5 tablespoons butter, softened
- 1 teaspoon pure vanilla extract
- 1 large egg
- 1/2 cup milk
- 1 1/4 cup finely chopped and peeled sweet apple (about 1 large firm Gala)
- 1/2 cup raisins
- Maple Frosting
Hoisin Sauce

Place all ingredients in a Mason jar and shake until it emulsifies
- 4 tbsp. soy sauce
- 1 tbsp. peanut butter or black bean paste
- 1 tbsp. brown sugar
- 2 tsp. white vinegar
- 1/8 tsp. garlic powder
- 1/8 tsp. onion powder
- 1/8 tsp. black pepper
- 2 tsp. sesame oil
- 20 drops chinese hot sauce (or habenero or jalapenos)
Cauliflower with Cheese Sauce

Steam cauliflower about 5 minutes; remove surface moisture with paper towel
- 1 bunch cauliflower
- 6 oz. extra sharp shredded cheddar cheese
- 3/4 pint heavy cream
- Nutmeg
- Salt / pepper
- 3 Tablespoons cilantro; chopped (optional)

- 1 tablespoon salt

- 1 tablespoon plus 1 teaspoon soy sauce
- 2 medium onions, chopped
- 4 stalks celery, chopped
- 2 green peppers, chopped
- 3 cups diced cooked beef
