I love that this soup is very flexible

  • FOR THE MEATBALLS:
  • 1 small onion, grated
  • 1/3 cup chopped fresh Italian parsley
  • 1 large egg
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1 slice fresh white bread, crust trimmed, bread torn into small pieces
  • 1 lb. lean ground beef, pork, turkey or chicken (or a combination of any of them – I’m partial to pork, myself)
  • 1/2 cup grated Parmesan
  • ...............................................
  • FORTHE SOUP:
  • 1/2 cup pasta, cooked or uncooked (acini di pepe, pepperini, orzo or other tiny pasta)
  • 6 cups chicken broth (can, carton or make your own broth)
  • 2 cups chopped escarole, curly endive or spinach
  • 1/3 cup finely chopped carrot (and feel free to add some finely chopped onion and celery, as well, if you like)
  • 1-2 Tbsp. grated Parmesan
  • (Optional: 1 egg beaten with 1 Tbsp. grated Parmesan)
  • Shaved parmesan cheese for garnish
