"These are the main reason I go to the fair
- 2 fresh Italian rolls or 2 kaiser rolls, split in half crosswise
- 1 white onions, thinly sliced
- 1/2 large green bell peppers, thinly sliced
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 lb rib eye steaks, very very thinly sliced
- 1/3 lb thinly sliced white processed cheese or
- 1/3 lb provolone cheese or
- 4 ounces melted Cheese Whiz

I love that this soup is very flexible
- FOR THE MEATBALLS:
- 1 small onion, grated
- 1/3 cup chopped fresh Italian parsley
- 1 large egg
- 1 teaspoon minced garlic
- 1 teaspoon salt
- 1 slice fresh white bread, crust trimmed, bread torn into small pieces
- 1 lb. lean ground beef, pork, turkey or chicken (or a combination of any of them – I’m partial to pork, myself)
- 1/2 cup grated Parmesan
- ...............................................
- FORTHE SOUP:
- 1/2 cup pasta, cooked or uncooked (acini di pepe, pepperini, orzo or other tiny pasta)
- 6 cups chicken broth (can, carton or make your own broth)
- 2 cups chopped escarole, curly endive or spinach
- 1/3 cup finely chopped carrot (and feel free to add some finely chopped onion and celery, as well, if you like)
- 1-2 Tbsp. grated Parmesan
- (Optional: 1 egg beaten with 1 Tbsp. grated Parmesan)
- Shaved parmesan cheese for garnish
