Ham & Potato Casserole

"I mostly use this as a breakfast casserole, but it's great anytime
- 1 32-oz package frozen hash brown potatoes
- 8 oz cooked, diced ham
- 2 10.75 oz cans condensed cream of potato soup
- 1 16-oz container sour cream
- 2 cups shredded sharp Cheddar cheese
- 1 1/2 cups grated Parmesan cheese
- 1/2 cup green onions, slice for garnish
White Sandwich Bread

This golden-crusted, soft white bread is a versatile star
- 1 packet "highly active" active dry yeast; or 2 1/2 teaspoons
- active dry yeast; or 2 1/2 teaspoons instant yeast
- 7/8 to 1 1/8 cups lukewarm water*
- 3 cups King Arthur Unbleached All-Purpose Flour
- 1 1/4 teaspoons salt
- 3 tablespoons sugar
- 6 tablespoons unsalted butter, room temperature
- 1/4 cup Baker's Special Dry Milk or nonfat dry milk
- 1/2 cup instant mashed potato flakes
- ....................
- Use the lesser amount in summer (or in a humid environment), the greater amount in winter (or in a dry climate), and somewhere in between the rest of the year, or if your house is climate controlled.
Kelly's Jiffy Cornbread

In mixing bowl combine flour, cornmeal, sugar, baking powder & salt
- 1 cup flour
- 2 teaspoon baking powder
- 1 cup yellow cornmeal
- 3/4 teaspoon salt
- 1/2 cup sugar
- 2 eggs
- 1/4 cup vegetable oil
- 1 cup milk
- 1 can cream corn
Chantilly Potatoes with a Parmesan Crust

Preheat the oven to 400°
- 2 pounds Yukon Gold potatoes, peeled and cut into 2-inch chunks
- Salt
- 1/2 cup cold milk
- 7 tablespoons unsalted butter, softened
- Freshly ground pepper
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
Red Beans and Rice

1. In a large pot, warm the oil over medium-high heat
- 1 tablespoon olive oil
- 1 large onion, diced
- 1 small green bell pepper, diced
- 2 teaspoons minced garlic
- 1 (16-ounce) can reduced-sodium chicken broth
- bay leaf
- 1 teaspoon dried thyme leaves
- 4-6 drops hot sauce (we used Tabasco brand)
- 3 (15 1/2-ounce) cans small red beans (we used Goya brand), rinsed and drained (You can also substitute kidney beans)
- 1 pound smoked sausage, sliced into bite-size pieces

- 6 cups hot cooked rice, white or brown

- For mix-ins:
- 1 tablespoon poppy seeds
- 2 tablespoons fresh lemon juice
- 1/4 cup mini chocolate chips
- 1 teaspoon all-purpose flour

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt

Soft Molasses-Raisin Cookies

These moist, “bendy” molasses cookies are studded with chopped golden raisins
- 1/2 cup butter
- 1/2 cup granulated sugar
- 1/4 cup molasses
- 1 large egg
- 1 3/4 cups King Arthur Unbleached All-Purpose Flour
- 1 cup raisins, golden or regular
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- heaping 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 3/4 cup coarse white sparkling sugar, for coating; optional
Panko-Crusted Fish Sticks

- 1 tablespoon milk
- 2 large eggs, lightly beaten
- 1 pound halibut fillets, cut into 20 (1-inch) strips
- 1 cup panko (Japanese breadcrumbs)
- 3/8 teaspoon kosher salt, divided
- 3/8 teaspoon freshly ground black pepper, divided
- 2 tablespoons canola oil, divided
- 1/4 cup sour cream
- 3 tablespoons mayonnaise
- 2 tablespoons finely chopped bread-and-butter pickles
