- 1 tablespoon olive oil
- 8 chicken thighs (about 8 ounces each)
- 1 green pepper
- 1 onion, choppped
- 1 clove garlic, crushed
- 1 cup long grain rice
- 1 tablespoon Cajun seasoning
- 2 1/2 cups chicken broth
- 1 zucchini, sliced
- 1/2 cup chorizo sasuage, thinly sliced
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
Cherry Almond Coffee Cake

"I've taken this several times to gatherings and it's always cleaned up
- Batter:
- 1 cup sour cream
- 1/4 cup water
- 3 eggs
- 1 (18 1/4 ounce) boxe white cake mix

I love pecan pie, but I often find it to be too sweet
- 1/2 c butter, softened
- 1 pkg 3 oz cream cheese, softened
- 1 cup flour
- Filling
- 2 T butter melted
- 3/4 c packed brown sugar
- 1 egg
- 1 t vanilla
- 1 1/2 cups chopped pecans
Better-Than-the-Box-Mix Cake

This will improve a boxed cake mix tremendously!
- Add one extra egg (or add two if you want it to be really rich.)
- Double the required amount of oil - BUT use melted butter instead of oil.
- Use milk instead of water.
Irish Mashed Potatoes With Cabbage

"This is typically called Champ, this one has some added ingredients!
- 3 lbs peeled yukon gold potatoes or 3 lbs red potatoes, halved
- 2 1/2 cups coarsely chopped cabbage
- 6 garlic cloves, peeled
- 1 chicken bouillon cubes
- 1/2 cup cream cheese
- 1/4 cup milk
- 1/4 cup sour cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray or butter
Pepperoni Stromboli

Place each loaf of bread dough in a greased large bowl, turning once to grease top
- 2 loaves (1 pound each) frozen bread dough, thawed
- 2 eggs, lightly beaten
- 1/3 cup olive oil
- 1/2 teaspoon each garlic powder, salt and pepper
- 1/2 teaspoon ground mustard
- 1/2 teaspoon dried oregano
- 1 pound ground beef, cooked and drained
- 1 package (3-1/2 ounces) sliced pepperoni
- 2 cups (8 ounces) shredded part-skim mozzarella cheese

"This is a great stew recipe from an elderly friend who served it for years for her family
- 1 -2 lb stew meat ( I like 1 1/2 lbs.)
- 4 potatoes, peeled and quartered
- 2 medium onions, peeled and sliced ( white or yellow)
- 2 cups carrots ( I use the mini carrots)
- 2 garlic cloves, minced
- 2 tablespoons tapioca
- 1 tablespoon Worcestershire sauce
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon pepper ( I use seasoned pepper)
- 1 (10 1/2 ounce) cans tomato soup
- 1 3/4 cups water
