Combine all ingredients for the sauce
- BBQ Sauce:
- 1 1/2 c. ketchup
- 1/4 c. Worcestershire sauce
- 1 c. light brown sugar
- 1/2 c. red wine vinegar
- 2 1/2 Tbsp. dry mustard
- 2 tsp. smoked paprika
- 2 tsp. hot sauce (like Tabasco or Cholula)
- 2 tsp. Kosher salt
- 1 1/2 tsp. coarse freshly-ground black pepper
- 1/2 c. water

- 3/4 cup ketchup
- 3/4 cup reduced-sodium soy sauce
- 1/3 cup sherry or chicken broth
- 2 1/2 teaspoons minced fresh gingerroot
- 1 1/2 teaspoons minced garlic
- 24 boneless skinless chicken thighs (about 5 pounds)
Zucchini Cakes

These zucchini cakes make an elegant appetizer fit for those upcoming Oscar parties
- NOTES:
- 1 large zucchini grated, excess water removed
- 1/2 cup freshly grated Parmesan cheese
- 1 cup Panko bread crumbs
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon paprika
- 1 clove garlic, minced
- 1 egg
- Salt and pepper to taste
- 1-2 tablespoons olive oil
- If you add too much nutmeg, it can quickly take over the taste, so remember - less is more.
- To remove the excess water, after you grate the zucchini, put the grated zucchini into paper towels and squeeze to release the water)
