- 2 medium carrots, coarsely chopped
- 1 large celery ribs, coarsely chopped
- 2 garlic cloves, coarsely chopped
- 3 tablespoons flour
- 6 sprigs fresh thyme ( or 3 teaspoons, dried thyme leaves)
- 1-2 bay leaves
- 2 quarts water
- Salt and pepper, as needed

- BREADING FOR CHICKEN:
- 2 cup flour
- 4 teaspoon salt
- 4 teaspoon black pepper
- 3 Tablespoons ground ginger
- 2 Tablespoons ground nutmeg
- 2 teaspoon ground thyme
- 2 teaspoon ground sage
- 2 Tablespoons paprika
- 1 teaspoon cayenne pepper

- HONEY GARLIC SAUCE:
- In a medium saucepan add:
- 2 Tablspoons olive oil
- 3 –4 cloves minced garlic
- Cook over medium heat to soften the garlic but do not let it brown.
- Add:
- 1 cup honey
- 1/4 cup soy sauce (low sodium soy sauce is best)
- 1 tsp ground black pepper
- Simmer 5-10 minutes
