Turkey Breast in the Crockpot

- 1 5 pound turkey breast with skin and bones (thawed for a day in refrigerator, if frozen)
- 1 Tablespoon olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon dried sage (rubbed sage)
- 1 large carrot, cut into pieces
- 2 ribs celery, cut into pieces
- 1 onion, peeled and cut into 4 pieces
- 2 cups chicken or turkey stock OR
- 2 cups water with 1 Tablespoon chicken or turkey bouillon granules
- 4 teaspoons arrowroot starch for gravy (can use cornstarch, but arrowroot thickens with much less starch)

- I used a 4.5 quart crockpot for this recipe.

Pineapple Coconut Ice Cream

This ice cream tastes just like a piña colada in a bowl
- 1 can (15 oz.) cream of coconut (found in the alcohol mixer or “ethnic” sections of the grocery store)
- 1 cup coconut milk
- 1/2 cup whole milk
- 2 tbsp. pineapple juice
- 1 cup coconut flakes, sweetened or unsweetened, plus 1/4 cup for garnish, if desired
- 3/4 cup finely chopped fresh pineapple (or canned crushed pineapple)
Classic Buffalo Wings

- *Buffalo Wings (No breading)
- *Chicken Drummettes
- 3 *3 Tbsp butter
- 3-4 *3-4 Tbsp hot sauce
- 1 *1 Tbsp cider vinegar
- *Cooking oil
- *Celery sticks
- *Blue cheese dressing of choice

- Note: Try to find large, plump chicken drummettes or buy meaty chicken wings and cut them into drummettes.
Pork Chops with Mustard Sauce

- 4 Boneless Pork Loin Chops
- 1/4 Tsp. salt
- 1/4 Tsp. Pepper
- 2 Tbsp. olive oil
- 1/4 cup white wine or chicken broth
- 3 garlic cloves, minced
- 1/2 cup chicken broth
- 1 Tbsp. butter
- 1 Tbsp. Lemon Juice
- 1 Tbsp. Dijon Mustard
- 1/4 Tsp. Worcestershire Sauce
