- 3 beaten eggs
- 3/4 cup oil
- 3 cups milk
- 3 cups flour
- 2 Tablespoons baking powder
- 3 Tablespoons sugar
- 3/4 teaspoon salt
- Vanilla to taste
- ..........................
- Mix all the ingredients together until smooth and cook on a hot waffle iron. Serve with Raspberry topping (recipe below) or your favorite syrup and a dollop of whipped cream.
Jack's Fried Chicken

- 1 package (16 ounces) penne pasta
- 1 cup chopped sweet red pepper
- 3/4 cup chopped onion
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 carton (18 ounces) refrigerated fully cooked barbecued shredded pork
- 1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
- 1/2 cup beef broth
- 1 teaspoon ground cumin
- 1 teaspoon pepper
- 1/4 teaspoon salt
- 1 1/4 cups shredded cheddar cheese
- 1/4 cup chopped green onions

- 1 (12 ounce) packages dry fettuccine, broken up in 2-inch pieces or
- Pasta of your choice
Baked Mac and Cheese

Heat oven to 350 degrees. In medium saucepan over medium heat melt butter
- 2 Tablespoons butter
- 2 Tablespoons flour
- 2 cups milk
- 3/4 teaspoon salt
- 1/2 teaspoon dry mustard

- 2 cups uncooked elbow macaroni
- 4 cups shredded sharp cheddar
- Bread crumbs mixed with melted butter and Parmeasan cheese
