- 1 pound ground beef
- 1/2 cup diced onion
- 1 can cream of mushroom soup
- 1/2 tsp paprika
- 1/2 tsp salt and pepper

Fill a deep skillet with enough oil to reach a depth of 2 1/2 - 3 inches (or use deep fryer)
- 1 cup mayo or Vegenaise
- 1/2 lemon, juiced
- 3 tablespoons finely chopped cornichons or pickles
- 2 tablespoons grated shallot
- 2 tablespoons capers, chopped
- 2 tablespoons fresh chopped dill
- 2 tablespoons finely chopped flat leaf parsley
- 1 teaspoon worsestershire sauce
- 1 teaspoon hot sauce

- 2 pounds cod or other sustainable firm, flaky white fish, cut into 4-5 inch chunks

Cocktail Meatballs (Betty Crocker)

I have been making these Betty Crocker Cocktail Meatballs for over three decades (arghhhh!)
- MEATBALLS:
- 1 lb ground beef
- 1/2 cup dry breadcrumbs (I used Italian breadcrumbs)
- 1/3 cup onion, minced
- 1/4 cup milk
- 1 egg
- 1 teaspoon dried parsley
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 teaspoon Worcestershire sauce

- SAUCE:
- 1 bottle (12-oz) chili sauce
- 1 jar (10-oz) grape jelly
Home-Fried Cheese Sticks

These are really simple to do, with only 4 ingredients hard to go wrong
- 24 (1 ounce) sticks string cheese
- 5 eggs, beaten
- 3 cups Italian seasoned bread crumbs
- 1 quart vegetable oil for frying, or as needed

This stir-fry is quick and easy to make and perfect when you are in a hurry but want to serve a nice meal
- 2 tablespoons cornstarch, divided
- 4 tablespoons beef broth, divided or
- 4 tablespoons dry sherry, divided
- 4 tablespoons soy sauce, divided
- 1 garlic clove, minced
- 1/2 teaspoon red pepper flakes, crushed (upto 1 teaspoon)
- 1 pound top sirloin, thinly sliced into 1/4-inch strips
- 1/2 cup water
- 3 tablespoons Vegetable Oil, divided
- 1 green pepper, cut into strips
- 1 sweet red pepper, cut into strips
- Chow mein noodles or hot cooked rice

- 2/3 cup sugar
- 1 cup half-and-half
- 2 cups heavy cream
- 1 tablespoon vanilla extract
Garlic Parmesan Crusted Pork Chops

These pork chops come out nice and juicy with excellent flavor
- 4 1/2-inch thick center-cut loin pork chops; (bone-in or boneless)
- 3/4 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1/2 teaspoon Dried rubbed sage
- 1/2 teaspoon Dried thyme
- 3/4 cups Parmesan cheese; freshly grated
- 2 large Eggs
- 1 tablespoon Vegetable oil
- 1 cup Dried seasoned bread crumbs; (I use Progresso garlic and herb)
- Olive oil (for shallow frying)
- 4 large cloves Garlic; peeled and chopped
- Lemon wedges; for serving
- Parsley sprigs; to garnish

- 1 medium onion, cut into small dice
