Semolina and Lemon Torta

Preheat the oven to 325ºF
- 2 tablespoons extra virgin olive oil
- 1/4 cup finely ground fresh breadcrumbs
- 6 cups whole milk
- Zest of 1 orange, removed in wide strips with a vegetable peeler
- 1 cinnamon stick
- 1 cup sugar
- 8 ounces semolina flour
- 5 tablespoons unsalted butter, at room temperature
- 8 eggs: 1 whole, 7 separated
- 1 pound fresh ricotta, drained
- Grated zest and juice of 3 lemons
- 1/4 cup Grand Marnier
- Confectioners’ sugar, for dusting
Bourban chocolate pecan pie

1. Combine flour, sugar and salt; cut in butter until crumbly
- Crust
- 1 1/4 cup flour
- 1 Tbsp sugar
- 1/2 tsp salt
- 1/2 cup cold butter
- 3 to 5 Tbsp ice water
- Filling
- 3 large eggs
- 1 cup packed brown sugar
- 1/2 cup light corn syrup
- 1/2 cup dark corn syrup
- 1/4 cup bourban
- 2 tbsp melted butter
- 1/2 tsp salt
- 1 1/2 cups halved pecans
- 3/4 cup 60% cacao bittersweet chocolate baking chips, divided
Drunken Steak

Drunken Steak recipe to fall somewhere in the middle of these two extremes, drunken and spice
- Other thin steaks with a loose grain, such as skirt or steak tips, can be substituted for the flank steak. Avoid dark or spiced rum here—its intense flavor will overwhelm the steak. If using a gas grill, grill the steak covered for maximum heat output.
- INGREDIENTS
- 1 cup light rum
- 1/2 cup soy sauce
- 1 tablespoon dark brown sugar
- 1 tablespoon grated fresh ginger
- 1 garlic clove, minced
- 1 scallion, minced
- 1 flank steak (about 1 1/2 pounds), scored on both sides at 1 1/2-inch intervals

- 1 3/4 cups granular sugar
- 2 eggs
- 15 oz. ricotta cheese
- 2 Tbsp vanilla extract
- 4 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- Icing
- 5 Tbsp milk
- 1 1/2 cups confectioner's sugar
- 1 tsp almond extract
- colored sprinkles
Ricotta Cheesecake

- 2 15 oz. containers whole-milk rocotta
- 1 Tbsp. unslated butter, room temperature
- 1 Tbsp. plus 1 cup sugar
- 3 Tbsp unseasoned dry breadcrumbs
- 2 8 oz. packages cream cheese, room temp, cut in cubes
- 2 large eggs
- 2 Tbsp salt free matzo meal
- 1 Tbsp fresh lemon juice
- 2 1/2 tsp lemon zest
- 2 tsp vanilla extract
- 1/8 tsp kosher salt
- powdered sugar for dusting
- 8 " inch diameter springform pan with 2 1/2 inch high sides
