season and brown chicken in oil (lard, bacon drippings) over med hi heat
- 1/4 cup oil
- 1 chicken cut up
- 1 1/2 lbs sausage
- 4 cups chopped onions \
- 2 cups chopped celery \trinity, chopped to desired size
- 2 cups chopped green pepper /
- 1 Tbsp chopped garlic
- 4 cups long grain rice
- 5 cups chicken stock
- 2 heaping tsp salt
- cayenne pepper to taste
- 2 cups chopped green onions
Shrimp and Gruyere Cheesecake

CHEESECAKE: Combine cracker crumbs and 1/4 cup butter; press into bottom of a 9-inch springform pan
- FOR CHEESECAKE:
- 1 1/4 cups round buttery cracker crumbs
- 1/4 cup butter or margarine, melted
- 1 1/2 pound unpeeled, medium-size fresh shrimp
- 1/3 cup minced green pepper
- 1/3 cup minced sweet red pepper
- 1/4 cup minced onion
- 1 large clove garlic, minced
- 3 tablespoons butter or margarine, melted
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup mayonnaise
- 4 large eggs
- 1/3 cup milk
- 1 1/4 cups (5 ounces) shredded Gruyere or Swiss cheese
- 1 teaspoon white pepper
- Garnishes: sweet red pepper strips, shrimp, fresh basil leaves
- Italian Tomato Sauce
- FOR ITALIAN TOMATO SAUCE:
- 1/4 cup chopped onion
- 1 clove garlic, minced 1 tablespoon olive oil
- 2 (14-ounce) can tomatoes, drained and chopped
- 1 1/2 tsp. dried Italian seasoning
- 1 bay leaf
Cheddar Bacon Biscuits

Preheat oven to 425. In 11" fry pan over medium-high heat, cook bacon until crisp, about 10 minutes
- 6 oz. bacon diced
- 2 cups all-purpose flour
- 1 Tbs. baking powder
- 1 Tsp. salt
- 2 tsp. sugar
- 3/4 tsp. freshly ground pepper
- 8 Tbs. (1 stick) cold unsalted butter, cut into 8 pieces, pls 2 Tbs. melted butter
- 3/4 cup shredded extra-sharp cheddar
- 1/4 cup grated Parmigiano-Reggiano
- 3/4 cup plus 2 Tbs. buttermilk
Cornbread Waffles

Preheat waffle iron Whisk dry ingredients in a large bowl Add buttermilk and oil and whisk until smooth
- 1 1/2 cups cornmeal
- 1 cup flour
- 1 TBSP baking powder
- 1 tsp salt
- 3 TBSP sugar
- 2 1/2 cups buttermilk
- 1/4 soybean or vegetable oil
Chocolate Sheath Cake

Chocolate icing: 1 stick margarine 4 T
- (2) In a saucepan, bring the following to a boil:
- 2 c. sugar
- 2 c. flour
- 1 t. soda
- 1 t. cinnamon
- (1) Sift together and set aside.
- 1 c. water
- 1 stick margarine
- 1/2 cup vegetable cooking oil
- 4 T. cocoa
- Add to dry ingredients mixing well. Set aside.
- (3) Mix: 1/2 c. uttermilk, 2 eggs, 1 tsp. vanilla. Add to chocolate batter.
- Bake at 400 degrees for 25 minutes or longer in greased/ floured pan.
Peanut Butter Pie

Preheat oven to 350. Combine graham cracker crumbs, butter, sugar and peanuts in bowl
- CRUST:
- 1 cup graham cracker crumbs
- 1/3 cup margarine, softened
- 1/4 cup sugar
- 1/4 cup peanuts, chopped
- FILLING:
- 1 package (10 oz.) peanut butter chips
- 1/3 cup creamy peanut butter
- 2 Tbsp. milk
- 1 Tbsp. butter
- 2 packages (8 oz. each) frozen whipped topping
- 1 cup hot fudge sauce
- 2 oz. chocolate, melted
- 2 Tbsp. peanuts, chopped
Rhubarb Cake

- 4 cups rhubarb
- 1 cup sugar
- 1 pint whipping cream

- FOR TOPPING:
- 1 1 lb. box powdered sugar
- 1/2 stick margarine, melted
- Dash salt
- 2 heaping tsp. cocoa
- 1 tsp. vanilla
- Milk to make proper thickness
