Cherry Republic Braised Chicken with Cherry Apple Cream Sauce

Heat oil in a large heavy bottom pan
- 2 Tbsp. oil
- 2 chicken breasts, thinly sliced
- Flour, S&P
- 1 large onion, thinly sliced
- 2 Garlic cloves, chopped
- 2 tsp. brown sugar
- 2 green apples, cut in wedges
- 2 Tbsp. Cherry Republic Cherry Red Wine
- 2 Tbsp. cherry mustard
- 1 cup chicken stock
- 1/2 cup sliced dried cherries
- 3/4 cup heavy cream

- 1 #2 can cherries (unsweetened)
- 1 #2 can pineapple

Carrot-Ginger Sauce

Heat the oil in a 4-quart sauce pan over low heat
- 1 Tbs. canola oil
- 2 Tbs. chopped shallot
- 1 3/4 cups lower-salt chicken broth; more as needed
- 6 medium carrots, peeled and cut into large dice (about 2 cups)
- 2 Tbs. reduced-sodium soy sauce
- 1 Tbs. finely grated fresh ginger
- 1 Tbs. unseasoned rice vinegar
- 2 tsp. honey
- 1 tsp. Asian sesame oil

1. Heat oven to 190C/fan 170C/gas 5
- 375 g pack ready-rolled shortcrust pastry
- 500 g/1 lb. 2 oz. onions, finely sliced
- 3 tbsp. olive oil
- few thyme sprigs, leaves only
- 3 eggs
- 300 ml/ 1/2 pt. milk
- 100 g/4oz. ready grated emmental (President is a good one)

- CUPCAKES:
- 1/2 cup butter, softened
- 1 1/2 cup sugar
- 2 eggs
- 2 1/2 Tbsp. cocoa powder
- 2 tsp. red food coloring
- 1 tsp. salt
- 2 1/2 cup all-purpose flour
- 2 tsp. vanilla extract
- 1 cup buttermilk
- 2 oz. water
- 1 tsp. white vinegar
- 1 tsp. baking soda
- CREAM CHEESE FROSTING:
- 8 o9z. package cream cheese
- 1/2 cup unsalted butter
- 1 1/2 cup powdered sugar

Lemon & Rosemary Roast Chicken with Crispy Potatoes

1. Heat oven to 220C/fan 200C/gas 7
- 2 kg/4 lb. 8 oz. floury potatoes such as King Edward of Maris Piper, peeled
- 1 lemon
- 1 tbsp. coarse sea salt
- 1 extra-large fresh chicken, around 2.7 kg/6 lb.
- 6 sprigs rosemary, plus extra for garnish
- 4 tbsp. olive oil
- 400 ml/14 fl. oz. fresh chicken stock
