Corn Risotto

Puree 2 cups corn kernels in blender
- 3 cans fresh corn kernels (from about 4 ears), or frozen, thawed
- 1/4 cup (1/2 stick) butter
- 3 Tbsp. chopped shallots
- 1/2 cup Arborio rice or medium grain rice
- 1/4 cup dry white wine
- 3 cup (or more) chicken stock or canned broth
- 1/3 cup freshly grated Parmesan

If you're using bay scallops, keep them whole
- 1 pound fresh bay or sea scallops
- Kosher salt and freshly ground black pepper
- All-purpose flour, for dredging

1. Tie the parsley stems and thyme together in kitchen string and place in a 6-quart slow cooker
- 1/2 cup chopped fresh parsley, plus 8 to 10 parsley stems
- 4 sprigs thyme
- 1 pound green split peas, picked over and rinsed
- 1 large leek, white and light green part only, halved lengthwise and thinly sliced crosswise
- 2 stalks celery, chopped
- 2 carrots, chopped
- Kosher salt and freshly ground pepper
- 1 smoked turkey leg (1 to 1 1/2 pounds)
- 1/4 cup nonfat plain yogurt
- 1/2 cup frozen peas, thawed

Clam Chowder

- 6 lb. littleneck clams, rinsed well
- 6 oz. pancetta, diced
- 3 Tbs. unsalted butter
- 1 yellow onion, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 2 tsp. chopped fresh thyme
- 2 Tbs. all-purpose flour
- 2 lb. Yukon Gold potatoes, peeled and diced
- 2 bay leaves
- 1 cup heaving cream
- 2 tsp. Worcestershire sauce
- Salt and freshly ground black pepper, to taste
- Pinch of cayenne pepper
- 1 Tbs. chopped fresh chives (optional)
