Here's a recipe I created as an alternative to plain potato soup
- Ingredients
- 1 large onion, chopped
- 3/4 cup chopped celery
- 1/4 cup butter
- 5 cups cubed peeled potatoes
- 3 cups water
- 3 cups 2% milk, divided
- 4 teaspoons chicken bouillon granules
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup all-purpose flour
- 4 cups (16 ounces) shredded cheddar cheese
- 1/2 pound sliced bacon, cooked and crumbled

After enjoying a spicy peanut soup at a little cafe, I knew I had to try and duplicate it at home
- 2 medium carrots, chopped
- 1 small onion, chopped
- 2 tablespoons Daily Chef 100% Pure Olive Oil
- 2 garlic cloves, minced
- 1 large sweet potato, peeled and cubed
- 1/2 cup chunky peanut butter
- 2 tablespoons red curry paste

- 1 bay leaf
