Almond Lace Cookies

Cook and stir all in 2-quart saucepan until butter melts
- 1 cup almonds- blanched and finely chopped
- 2 Tablespoons flour
- 1/2 cup sugar
- 2 Tablespoons milk
- 1/2 cup butter
Chicken Alfredo Casserole

Preheat oven to 350*. Prepare pasta according to package directions
- 2 dry cups pasta
- 1 15-16 oz jar of a GOOD Alfredo sauce
- 1-2 cups cooked chicken, shredded or chunked
- 1/2 cup chicken broth
- 5 oz shredded Parmesan cheese
- 2 cups shredded mozzarella cheese (one 8 oz bag)
- 1-1/2 tsp minced garlic
- salt and pepper to taste
Baby Back Pork Ribs

Preheat oven to 350 degrees
- 2 racks of baby back pork ribs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Bottle of barbecue sauce
Pizza Casserole

1. Cook pasta to al dente
- 1 lb. bow tie pasta
- 1 lb. ground beef
- 1 large onion, chopped
- 2 (26 oz.) jars spaghetti sauce
- 1 lb. cubed cooked ham
- 1/2 -1 lb sliced pepperoni
- 3 (8 oz) bags shredded mozzarella
- 6 tablespoons graded parmesan
- 2 tablespoons chopped garlic
- 1 teaspoon dried oregano
Cheesy Baked Tomatoes

Preheat oven to 450 degrees
- 4 tomatoes, halved
- 1/4 cup freshly grated Parmesan cheese
- 1 oz. provolone cheese, shredded
- 1 teaspoon chopped fresh basil
- 1 teaspoon chopped fresh oregano
- 1/2 teaspoon salt
- Pepper to taste
Traditional Pastitsio "Greek Lasagna" Recipe:

Saute onions in oil on medium heat for about 10 minutes, add the garlic and bay leaves and cook another 5 minutes
- Béchamel Sauce Recipe:
- 1 kilo (~2 lbs.) lean ground beef
- 3 medium white onion, chopped
- 1/4 cup EVOO
- 3 cloves of garlic, minced
- 3 bay leaves
- 1 tsp. Greek oregano
- salt and pepper
- 1 T. tomato paste
- 1 can crushed tomatoes
- 1/4 cup dry white wine
- 1-2 all spice berry
- 1/2 -1 tsp. cinnamon
- 1 pkg. pastitsio or bucantini noodles (substitute just penne would work too)
- 1/2 - 3/4 cup Kefalotyri (Ramano or another hard cheese)
- 1 stick butter (~100-125g.)
- 1 cup AP flour
- 10 cups warm whole milk
- 8 eggs, room temperature
- 1 cup grated hard cheese (vlahotyri, romano, parmesan, ect)
- salt and pepper
- 3/4 - 1 tsp. nutmeg
- More hard cheese to grate on top
Chicken Noodle Casserole

In a large bowl, combine soup, mayo and lemon juice
- ALTERNATIVE RECIPE:
- 1 can cream of chicken soup
- 1/2 cup mayo
- 2 tablespoons lemon juice
- 2 cups cubed cooked chicken
- 1 small onion, chopped
- 1/4 cup chopped green pepper
- 1/4 cup chopped sweet red pepper
- 1 cup shredded Monterey Jack cheese, divided
- 1 cup shredded sharp cheddar cheese, divided
- 12 oz. medium egg noodles, cooked and drained
- 1 lb. cooked, boneless, skinless chicken breast halves, cubed
- 3 celery stalks, chopped
- 1 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups cooked fine egg noodles
- 1/4 cup mayo
- 1 can cream of chicken soup
- 1 cup crushed potato chips
Grilled Marinated Chicken Teriyaki

Fabulous homemade teriyaki marinade, followed by a quick grilling
- 6 boneless, skinless chicken breasts
- 6 ounces (3/4 cup) pineapple juice
- 1/2 cup reduced-sodium soy sauce
- 1 tablespoon molasses
- 2 tablespoons brown sugar
- 1/4 cup canola or olive oil
- 3 tablespoons cider vinegar
- 1 teaspoon garlic powder
Tomato Gravy

Melt butter in a large saucepan over medium heat; add flour, stirring until smooth
- 2 tablespoons butter
- 2 tablespoons flour
- 1/2 cup chicken broth
- 1 (14 1/2 oz.) can diced tomatoes with basil, oregano and garlic
- 1 teaspoon sugar
- 1/2 teaspoon seasoned pepper
Beef and Cheese Manicotti

- 4 teaspoons olive oil
- 1 medium onion, coarsely chopped
- 1 pound ground beef
- Salt and freshly ground black pepper
- 14 (8-ounce package) manicotti
- 1 (15-ounce) container whole-milk ricotta
- 3 cups shredded mozzarella
- 1 cup grated Parmesan
- 2 tablespoons chopped fresh Italian parsley leaves
- 2 garlic cloves, minced
- 3 cups marinara sauce
- 2 tablespoons butter, cut into pieces
