Make Ahead Shrimp Salad
By McLean
Combine first 9 ingredients in a large bowl; stir in shrimp and tomatoes
- 1 cup mayonnaise
- 1/2 cup finely chopped celery
- 1/4 cup finely chopped onion
- 1/4 cup ketchup
- 2 teaspoons prepared mustard
- 2 teaspoons lemon juice
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 pound frozen peeled and deveined salad shrimp, thawed
- 1 cup grape tomatoes, halved 7 cups shredded lettuce (1 head iceberg)
El Dorado Beef Casserole

Preheat oven to 375 degrees
- 1/2 lb ground beef
- 1 medium-sized onion, chopped
- 2 (8 oz) cans tomato sauce
- 1 cup water
- 1/4 teaspoon chili powder
- 1 (9 oz) package tortilla chips, coarse lay crushed
- 1 cup sour cream
- 1 cup (4 oz) shredded Monterey Jack cheese
Chewy Butterfinger Cookies

Preheat oven to 375 degrees
- 1 3/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup (1 stick) butter, softened
- 1 large egg
- 8 fun sized butterfinger candy bars, chopped or 1 cup (about three 2.1 oz. bars)
Brown Sugar Oatmeal Muffins

Heat oven to 400. Grease muffin cups, or use foil or paper baking cups
- 1 cup old-fashioned oats
- 1 cup whole-wheat flour
- 1/2 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 3/4 cup packed dark brown sugar
- 3/4 cu milk
- 1/2 cup butter, melted
- 1 teaspoon vanilla
Orange Cake

Place a rack in center of oven and preheat oven to 350 degrees
- Glaze:
- 1 package yellow cake mix
- 1 cup fresh orange juice
- 1/2 cup vegetable oil
- 1/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 4 large eggs
- 1 cup confectioners' sugar, sifted
- 3 tablespoons fresh orange juice
- 1 teaspoon fresh grated orange zest (from 1 orange)
- Frosting:
- 1 (8 oz.) package cream cheese, at room temperature
- 8 tablespoons butter (1 stick), at room temperature
- 3 cups confectioners' sugar, sifted
- 2 tablespoons fresh orange juice
- 1 tablespoon grated orange zest

- 1 cup flour
- 2 eggs
- 1 cup panko crumbs
- 1 cup sweetened or unsweetened organic coconut flakes (I use sweet)
- 1 pound medium-large shrimp, cleaned, deveined and butterflied (optional)
- vegetable oil for frying
- 1/2 cup orange marmalade
- 2 tablespoons rice or white wine vinegar
- 1 teaspoon dijon mustard
- a dash or more of red pepper flakes
- Or:
- 1 cup orange marmalade
- 1/4 cup honey
- Or:
- 1/2 cup chili sauce
- 1/2 cup apricot preserves
Brickle Bars

- 1 yellow cake mix without pudding
- 1/3 cup butter, melted
- 1 large egg, lightly beaten
- 1 (10 oz.) package brickle chips
- 1 can condensed milk
- 1/2 cup chopped pecans

Tilapia, Creamy Parmesan Broiled Tilapia

Place mayonnaise, yogurt and parmesan cheese in a small bowl, mix with a spoon until well combined
- 3 Tilapia fillets (3 to 6 ounces each)
- 4 teaspoons light mayonnaise
- 4 teaspoons non-fat plain yogurt
- 8 tablespoons shredded Parmesan cheese
- 4 to 8 sprigs of fresh dill
- 2 teaspoons garlic powder or garlic salt, divided
- black pepper, to taste
- non-stick cooking spray
Slow Cooker Ranch Pork Chops

Combine all three ingredients in the crockpot and mix well

- Ranch Seasoning Dry Mix Packet
- 1 can Cream of Chicken plus 1 can water as needed {or 2 cans cream of chicken} This will depend on how fast your crockpot cooks and how long you’ll be cooking it.
